I finally tried upma in India. it's moist and not soupy. I liked it! Also learnt that Vadai has a lookalike called Medu Vada, or are they the same? Amazing world of food culture.
Another great excursion! I adore Indian food and cook it quite a lot--it's a very vegetarian friendly cuisine. The mithai are often a bit too sweet for my taste--I love many of the yogurt or milk-based sweets like Shrikhand and Kheer when the sugar is reduced. I'm going to miss Jean when she's not around. She really should make videos. The combination of her sweet personality and her wealth of knowledge is killer! ツ Shinichi, you're great as always.

Jalebi is more of a North Indian sweet delicacy made with refined wheat flour. Jangiri( term used more commonly in southern india) and imarti (term used in northern india)are same and made from urad lentil. However both follow batter making, fermentation, frying and soaking in syrup route for completion. Since they are so close in style of cooking another difference is usually the slight difference in shape ( so that people don't mistake I guess while ordering ;p). Orange is food additive colour now days but could be natural colour extracted from saffron in some places. Indians love yellow and orange coloration as it is considered auspicious.
Had a steaming hot chicken curry briyani @ a Christmas Market in Glasglow in the bitter cold.... really hits the spot U guys should try Rawa Dosa when u return to Spore .... my favourite dosa

The biryani looks amazing,a must try next time. Maybe the upma intentionally watery for dipping.The good thing about Singapore is you can try all the dishes without worrying about quality. I only know the Arabic halva dessert,that orange one reminded me of a dessert I was given in Cyprus a lifetime ago that tasted like jelly shampoo😁I am sure yours didn't. Hungry now, thanks 👍

Sorry to say that the biryani looks like it’s made with store-bought bryani seasoning-mix. Agree w everyone below that the upma isn’t thick enough. I usually get my vada/vadai from this place where it’s perfectly made, even down to the shape. Shinichi/Jean, that’s made out of lentil flour btw.

The quality varies quite a lot in my experience (like anywhere, I suppose), but it's never been bad. You also need to make sure you differentiate between places that make Indian Indian food and places that make Japanese Indian food (think curry rice).
Can you guys please make a review on the very first Michelin star rated noodles I heard the it was a good soup and I wanted you guys to test it out hopefully it is a future idea. I do not know the price for it I'm sorry but i do know it is the very firet ramen noodles with a Michelin star

Hi ! That is not upma , what you made at home is the correct version. I guess the upma here is meant to be eaten as a sauce with the Vada, usually Authentic Vadas or Medu Vadas ( Lentils, Chillis, Onions, Curry leaves) are eaten with Chutney and Sambar.

I love biryani from Yakadar Muslim Stall. It is the best at Tekka Centre. That gravy is called " dalcha " and goes well with the Biryani. Think of going back? Try the Indian Rojak and you'll love it. Otherwise, head towards Chinese Section n look for a young lass, selling Prawn Noodle ( Stall faces Bukit Timah Road ). Try the dry version n followed with the soup one....yummy !!!

Wow I have never known a boiled egg to come with briyani! I absolutely love briyani especially chicken tikka briyani. Here in the UK they give you a curry sauce to add on top of the briyani. Depending on where you order it from, its just a curry sauce and a few others its got veg and potato mixed in. I tend to prefer it if its not just the sauce as it adds a bit more to the rice.
The essential way of eating Indian food. 1. Start off with a starter like a samosa or pakora. 2. Have the flat bread (roti, chapati, naan, puri, paratha, kulcha, bhatura) with some of the side dishes, either vegetarian or non vegetarian. You tear the bread and scoop out the curry aka sauce/gravy. The hotter/warmer the bread the more the flavors. 3. Have the rice with the lentils or curry. The biryani is always eaten with a yoghurt dish called Raita and/or a meat curry called Salan. 4. Finish off with a sweet desert either gulab jamun, kheer, payasam etc Even though all the ingrediants look like a perfect recipe for a burrito, but that is never done. Next time try Murgh (chicken) Mussalam.
One thing I've noticed watching many videos is that 'overcooked' hard boiled eggs (with a greenish layer around the yolk) seems to be totally fine in Asian cuisine, whereas that would be considered a bit of a failure in Western cuisine.

There is no different between Jalebi and "Jangiri" other than the shape. Ah yes! One more difference, Jalebi's don't have any sugar crystal formations as they are sold hot; fresh out of deep-fryer and kept in sugar syrup for a minute. Whereas Imarti, (Jangiri) is sold cold, or you could say, it doesn't sell much so stays on the counter and cools down forming sugar crystals. Plus the upma you made at home was the correct one. When you thought you were eating eggplant in upma, it was actually "Lauki" bottle-gourd.

India food is very cheap in Singapore. In Canada esp. in Toronto area Indian food is very expensive. The 2 dollar box show will cost 12 Canadian dollars that equal around 9 US dollars in Toronto plus 13% Sales Tax. Many Indian restaurants are going bankrupt in Toronto area due to expensive, where as you see many Indians in the neighborhoods but almost no Indian restaurants.

Not necessarily. Upma can be watery too. Not my favorite kind, but I've had watery upma as a kid. It's not uncommon.

The difference between jangiri and jalebi is that jalebi is made with flour but jangiri is made with urad dal

Upma texture depends on the region of India. In northern and Eastern India, it is dry.

You are talking about only north , in south we do...
Though we call it as Briyani, South Indian version is totally different from North Indian version both in making and Ingredients.
