      No I usually season both sides of my burgers with Kosher salt and ground pepper and lightly season veggies that are caramelized.. cooking the salty foods reduce the sharp salt taste compares to adding salt 3 times after cooking g

      It's about the cooking. You lose a lot of seasoning with beef once it's applied to heat so it's not at all unreasonable to thoroughly season it.

      Hi there,
      If you do not mind me sharing; a well-planned, organic, unrefined and untempered with vegan diet (consuming raw plant foods where possible so as not to denature or destroy the life-forces and enzymatic activities beneficial to the human system. If disagreeing on this matter, please take some steamed carrots, plant them and see if they will grow; if not, it is because they are 'dead' plant food that cannot benefit one's 'living' cells) consisting of organic fruits, vegetables, legumes, nuts, seeds and whole grains is the best diet to provide mankind with ultimate health and longevity.
      Regarding the whole protein concern for vegans is exaggerated from gathered information especially that there are 'high protein' plant food sources e.g nuts and legumes; People showing signs of deficiencies e.g those showing signs of anorexia, actually need plant food sources such as starchy carbohydrates that help with weight gain than protein.
      I highly encourage being a sceptic, research things for yourself, and you will find out that the diet shared with you is actually for your own good (even if it means making small changes here and there, i would encourage) e.g processed meats are classified as carcinogenic to humans in Group 1, which is as bad as it can get, where as plant foods are classified as anti-cancer foods.
      Please avoid factory produced meat alternatives whose chief ingredient can be 'soy' and may contain preservatives as well as additives (e.g vinegar, a corrosive agent). Food toxicity and nutrient deficiency (e.g white bread, white rice and white sugar) are a deadly combination as one is hindering the body's building materials needed to action healing whilst at the same time taxing the system with more toxic stuff, thus bringing about disease and possibly even an early death.

      @@Look.Upward If humans aren't meant to eat meat, why did we EVOLVE to hunt? Did we evolve a complex brain and sophisticated social structures just to sit around and munch on plants? Is it a mere coincidence that some of the first tools we created were used specifically to kill and hunt animals for consumption? You vegans always claim to be "on the side of nature," yet can never explain why humans are supposedly the only "herbivorous apex predators." Chimpanzees, our direct ancestors are omnivorous and eat whatever they can find. Even herbivorous animals like deer, when facing nutrient deficiency, will supplement their diet with birds or small animals (there is footage of this available online). God doesn't exist and humans evolved to be omnivores. "Plant foods are anti-cancer foods" is a generalization. Morphine comes from plants and is therefore natural, should people consume it? Plenty of plants-derived substances are carcinogenic and plenty of animal products have anti-cancer properties. What matters is the CHEMISTRY of the substance, not "life-forces." Also, if "dead" cells cannot benefit one's "living" cells, how will eating a raw cucumber benefit my body after my stomach acid kills its cells? No logic whatsoever, go pray to your imaginary god.

      I think cause salt draws out water so it would have made the burger soggy and sliding apart. Even a “dry” tomato still makes a burger a lil soggy slip slidey which I hate 🥲

    Looks great! Glad Gordon didn't do the typical pretentious chef thing and use a bunch of expensive oddball ingredients. I've been making lots of burgers myself recently, been getting fresh ground beef from the Butcher and hand making the patties on top of fresh buns from the bakery. I love burgers. ❤️

      Simple is usually best.
      My most recent favorite burger uses a bread mix binder in the beef.
      2 slices of bread no crust cut up into cubes
      1/3 cup milk in and turn bread to paste
      1 1/2 tablespoon Worcestershire
      2 tablespoon ketchup
      1 teaspoon pepper
      2 1/2 teaspoon salt
      A few garlic cloves
      Mix and add to beef.
      Add chopped scallions if desired. New fan favorite with friends and family.

      The fat in meat doesn't give you a heart attack nor does butter or salt. Your arteries get clogged with cholesterol when you have high levels of insulin running through your veins for years. What causes insulin to spike to abnormally high levels ? Eating carbohydrates, or eating frequently throughout the day, or both.
      Humans are designed to eat fat. Have a look at videos from Dr Jason Fung or Dr Ben Bikman, to name just a few.

    What irritates me the most as someone from the uk is that its next to impossible to get proper american cheese anywhere, it may not be good for much else in cooking but I think you absolutely need american cheese on a proper burger as it melts without splitting. Before you say anything, adding gelatine to cheddar is not the same thing as its a whole different process.

    I'm but a lowly youtube commenter, Chef Ramsay, but I want to share something with you, as an American and burger lover, about most gourmet burgers. The toppings are tall enough as is. Most of these, you'd have to dislocate your jaw to bite into it. Also, the beef patty shrinks when you cook it, making it smaller than the bun. I propose you use thinner and wider patties. This makes it easier for the jaw and ensures beef in every bite. Something to consider.

    It was very good, definitely a keeper recipe for me. Just cut back on salt people, still good. I learn so much from Gordon, he's a great chef.

    2:35. The one thing that actually needed "more salt" were the tomatoes and he put no salt on them--hahaha. Why would you ever put salt on cheese? Gordon is a renowned chef and he knows a heck of a lot more than me on cooking, but I think he over-seasoned that burger and the butter was not needed.

      I mean everything tastes better with butter plus it helps soften the onions and it helps with steaming the cheese after the lid comes on because og the moisture it provides. I will agree with you on the salt and pepper thing tho, wtf was he thinking

    *Personal Tip:* If you plan on doing this with veggie patties try using “Gourmet Burger Seasoning” in addition to all the other seasonings. The spice blend along with the added “smoke flavor” in it really enhances the flavor
    *2nd Personal Tip:* If you’re using something like butter-flavored coconut oil in the pan instead of real butter, I’ve found you can enhance the mouth feel of a veggie burger if you only add like 2/3 the amount of coconut oil and replace the rest with actual raw coconut butter.
    *3rd Personal Tip:* IMO vegan cheese _(besides cream cheese)_ is usually pretty terrible and being on a burger doesn’t mask it. So use real cheese on that burger or none at all.

    I would say an 'all American' burger would have to be a smash burger. Not saying this style isn't good too, just not what I would consider the traditional American style. The patty should be thin and crispy, with one slice of American cheese. You can do a double and put the cheese in between so it holds it all together. Onions shouldn't be caramelized for sure; that gives it that rich gourmet taste which just isn't what people think of when they hear 'All American'. To finish off, either burger sauce or mayo/ketchup/mustard separately, tomatoes, pickles, a slice of lettuce and some diced onions that you washed in water to bring down the sharpness and perhaps marinated for a while in some vinegar or pickle juice. Now that, is an All American burger you will find at Shake Shack and In-N'-Out.

    I get re-seasoning the patty after flipping since some fall off in the pan, but the tiny sprinkles on both cheese slices was pretty weirdchamp.

    I’ve noticed over the many years that I prefer smashed burger style over the gourmet style of burger.
    This means two small golf ball sized Patties seared over very high heat where they are charred, homemade brioche buns toasted inside, a slice of American cheddar cheese on each patty and a mayo/katchup sauce mix.
    If I’m going all out, I’ll add grilled onion.
    No lettuce, no tomato. Keep the greens in a salad.

    That looks so gorgeous. As an ex- dishwasher in a restaurant who have fed over 50 hungry employees one day with burgers, I can say every step he made was great except: PLEASE DON"T SEASON THE CHEESE!!!
    they are already factory seasoned. adding more salt to already salted cheese is extremely dangerous for both your pallets and your kidneys.

      It might be that the cheese he used wasnt partcularly salty. Processed cheese as we call it in the UK varies in saltiness.

    While watching this I was saying to myself, "That's going to taste salty." and then he'd add more. IMHO it's not a burger without bacon on it.
