SUPER CRUNCHY Japanese style Seaweed (Kombu) Salad Recipe

  • LEARN HOW TO MAKE A REFRESHING CRUNCHY KOMBU SEAWEED SALAD RECIPE AT HOME!
    LAY HO MA! This salad is one of my all time favourites - it's sweet, salty, tangy, has that incredible umami, and it's addictively crunchy! Join me in this episode and learn how to make this delicious kombu seaweed salad just like the one at the sushi restaurants - wait no, better ;)
    Ingredients:
    1 large daikon radish
    2 carrots
    4 dried shiitakes
    40g kombu
    1.5L water
    1/2 tbsp black peppercorns
    4 tbsp soy sauce
    2 tbsp rice vinegar
    2 tbsp cane sugar
    1 tsp toasted sesame oil
    3 tbsp toasted white sesame seeds
    Directions:
    1. Peel the daikon radish and roughly chop half of the radish. Roughly chop one of the carrots
    2. Place the chopped radish and carrot into a medium sized stock pot. Add the dried shiitakes, kombu, water, and black peppercorns
    3. Cover and bring to a boil. In the meantime, chop the remaining daikon radish and carrot into thin matchsticks. Place them into a large mixing bowl
    4. When the water comes to a boil, remove the kombu. Continue simmering the veggies for another 20min or 1 hour
    5. Rinse the kombu in cold water. Then, stack a few sheets of kombu together and roll them up
    6. Thinly slice the kombu and repeat with the remaining kombu. Then, place the sliced kombu into a colander. Rinse well with cold water and drain. Add the kombu to the mixing bowl
    7. Make the dressing by combining the soy sauce, rice vinegar, cane sugar, and toasted sesame oil. Pour half of the dressing onto the salad and taste. Add more dressing if desired
    8. Add the toasted white sesame seeds to the salad. Then, mix and serve

    I’m a huge fan of kombu salad, stir-fried kombu, kombu stock, kombu in onigiri, and kombu sushi. I found a source from a small start-up that is practicing sustainable harvesting and it is so full of flavor and texture. I’ve loved your salad recipe from Vegan Ramen and make it often. So good!

    I have tried other channels and so far your channel is the best. I call myself the reluctant vegan. I found out , I am allergic to milk and eggs. My stomach problems gone , however I was getting tired of peanut butter and jelly sandwiches. Your channel has helped me to move from P and J sandwiches. Thank you 😊

    this looks amaaazing and surprisingly doable. my favourite dish from our local Korean place is the seaweed salad selection but it is just a small taste of each in single use plastic tubs, this looks like i could eat it all week with rice and tofu and some simple greens :D thank you!

    Thank you so very much for providing this Kombu seaweed salad. Many, many years ago I 1st encountered seaweed salad & just fell in LOVE with it! I "discovered" it @ the Korean restaurant I ate @ a lot. I'd ask them how they made it, but they'd never tell me! I eventually found seaweed salad @ Asian grocery store when I knew what to look for. The seaweed salads I've had were the Wakame variety like you spoke of, but I've always liked Kombu & would always use Kombu when I cooked beans because I read the Kombu helped to cook the beans (if that makes any sense because I'd cook the beans from dried state). Anyway, I'm going to make this seaweed salad & am certain I'll love it.

    You have my utmost respct, I always make ramen for christmas, I gather my friends, and assemble the ramen in front of them, but I always thought it is a waste if I throw away the kombu, for example I use the shiitake that boiled along with chashu, soy sauce, sugar, salt etc, and i make it a topping, but the kombu that I used for the double soup method stock, I threw it away because I did not know what to do with it. Thank you for this video!

    Hi, Wil! I was wondering what your favourite food was when you were a child and which dishes your mom cooked again and again.
    Seaweed is so good. I ate it in a Taiwanese restaurant some years ago. It was sauteéd in the pan with garlic.

    I don’t know where to get good fresh sesame seeds. I’m always hesitant to buy them for fear they won’t be fresh. Mostly I see them sold in jars in the dried spice isle at the grocery. Any suggestions? Asian grocery ?
