One race that really needs to be expanded are the Lekgolo. We hardly know anything about them, and the novels after Bungie's time hardly ever covers them.

I need to check which book, definitely in the forerunner trilogy but they said the San-shyuum look this way after the human forerunner war they breed themselves ugly, this was the first time forerunner defeated them, I have one more forerunner book to go and they have not mentioned degrading anyone other than human DNA
Honestly my favorite species in the covenant. Would love to see their reactions to the Forerunner Saga. A sect worshiping the domain the great journey being to die and go into the domain which even the forerunners did but were locked out potentially due to committing suicide to gain entrance. Would the Precursors be worshiped as a greater species than the Forerunners as they are technical technically the gods of Halo. We have that bit of the flood being worshiped by that one ship Would this extend more with the revelation of the Precursors and flood being the same?
I have a halo game idea were playing as an elite on high charity during the grunt rebellion the game will start in the elites room we walk out to a phantom crashing and we walk over to the phantom looking for survivors it was an ambush a dozen suicide grunts come running towards you all you have is a plasma pistol and you die title card! now you play as a elite zeolite on the mid level of high charity you’ll play trying to stop the grunts but the first level the first boss fight is a grunt goblin and that’s the first few levels what you think?
