    That is such an amazing creature and it brings me joy to see every part being used and nothing wasted. With that said, I don't think I could eat the eye or the brain. Fortunately, my wife is Filipino and would fight me for it anyway :)

    Wow Harry. You really know your way around a tuna. I'm impressed. I can imagine how good that was to eat.
    I did over 1000 hours on a longline boat out of Cairns, QLD , Australia in the late 90's. That isn't that long in the scheme of tuna fishing but it was a great experience.
    You probably already know this but if you could stress the importance of this to your son and his mate, you will get even better quality fish next time.
    Bringing that fish home with the gills still in it is a huge no no. A fish like that has to be bled and cleaned properly, immediately on capture and then iced or in an icy brine slurry. the gills and entrails need to be removed as one (there is a special technique for this) and preferably brain spiked. If this is not done, the adrenaline coursing through the fish will release certain chemical compounds that I have forgotten the name of (sorry) into the flesh and they will begin to taint the meat almost immediately. How tainted depends on many things but this is the general rule.
    As good as I'm sure it was, that fish would have been rejected at the Japanese tuna market.
    The only time I got to eat fish like that was when one was caught that was bit in half by a shark lol. Cheers.

    This is awesome! Well done getting this! A head like this would do amazing as a stock! This made Tuna think about a pit being about to impart smoke flavor into a stock/broth, would the smoke do anything to liquid, or would it just bounce off and not penetrate it at all? Have you done any wild experiments like that, Harry?

    My last blue fin was 187kg so around 408 lbs. this one looks about 100lbs less. I would say around a 300 pounds. Awesome video!!!

      It's a Ponzu citrus sauce which is soy, rice vinegar, sugar, Japanese pepper called Togariashi

    What’s your opinion on soaking your wood chunks pre-smoking. Saw a few videos where the people soaked their chunks of wood in vinegar, wine, or water. Is it worth the hastle?

      My first bluefin runs head ever. I have never caught a bluefin tuna, just yellowfin and albacore. I think bluefin is very expensive to buy if you can find them. It was so delicious! 😋😋😋

    Awesome video, Hannibal! Don't think any other BBQ channel could conjure this up. I've been grilling salmon fish heads all summer. Dirt cheap and delicious! Get 'em at my local H Mart.
    I've fed my dog grilled tuna and he initially eats it like it's beef.

      ,no it didn’t not trickle down the family tree!..my grandmother lived through the Great Depression and at that time people didn’t waste anything.As for the part of not wasting anything that did trickle down the family tree.I grew up on my grandma’s farm and we lived off the land.We hunted,fished and trapped for our meat.we planted a garden and canned enough vegetables to feed our family of 7..my dad is almost 75 years old and he still plants a garden big enough to feed a army..lol

    The fish eyes and brains are my favourite! And so healthy for your own brain too! I wish you had also shown the little stone in the brain...I think it might be part of the ears?? When I eat smaller fish brains, I always make sure I remove that part.

    Love bluefin... always eat it lightly seared/raw. Never smoked it. Not so sure about that.
