It amazes me how these pitmasters can achieve such high quality on a commercial scale. You'd swear each brisket had it's own caretaker. With all the variability in wood, meat, ambient conditions, it truly showcases what Harry has always said, it's the skill of the pitmaster that makes the difference.

You gotta check out Goldee's BBQ in Ft Worth, Texas Harry. We went a few weeks ago when they won the Texas Monthly #1 spot and their BBQ was phenomenal. Best spare ribs I've ever had and their brisket was perfect as well. Even their Turkey breast which I don't normally like was great.
The guy at sitting at the end stayed on his phone. Sheesh. Enjoy the great food and great company. Social media and texts can wait til after dinner. On a side note, great video and now I’m adding this to my list of places to check out. Ernie seems like the real deal.
This looks like 2m smokehouse here in San Antonio definitely one of the best in the state of Texas I got to visit this place soon tho thanks for the review Harry
I've had both, definitely some similarities. But both different and equally good enough to warrant trips to both places! I've been to Franklins multiple times, and in my opinion these two places are probably the closest you will get to that in the San Antonio area. Also, I love the tex-mex twist that both 2M and Burnt Bean throw in.

Prices for meats are incredible. What goes up usually comes down. Not food prices. Stop on the prices on the chalk board. At first I thought they looked good. But note that these are by the 1/2 pound. Not 1 pound! Shameful!
You may not have shopped for brisket recently to know what is happening at food prices. If you run a restaurant and don't manage your prime cost, you'll be out of business.

Most of the world knows Austin and Texas. Any more military coordinate granular than that, viewers will likely not know the geography of Texas. I suspect it to be also true for most my fellow pitmasters. :-)
