Yo Harry! It’s me Larry! Dude, I have become the “BBQ Guy” on my cul de sac in the neighborhood, and have been spreading the BBQ goodness here in San Diego for over 4 years now. Mainly pork shoulders and briskets, large birds and my soon to be famous smoked chili all cooked with lots of love on my 22.5 WSM (with Jealous Devil Lump of course). My Mom gifted me a Dalstrong about 3 years ago and it is a Shogun Series 8" Butcher & Breaking Cimitar knife. By far the coolest and best knife I’ve ever owned!! Outstanding quality. Anyways, I’ve been a Sub for about 2-3 years now and I really dig your channel, it’s guided me the right direction dozens of times and is appreciated. I watched like 3 hours of you and Burrfection sharpening knives, borrowed a friend's whetstones - mostly the same ones you guys were using and sharpened all my knives at home. I don't have anything nice other than a pretty nice nakiri. Didn't do as good of a job sharpening them on the whetstones but at least they're sharper than they were before! Love the Cantonese style BBQ pork. Those ribs must be amazing. Hi Mr. Beans!

Harry I’m continuing to enjoy all of your videos. I’ve even got my ten month old little boy watching along with me. He love helping daddy in the kitchen already. Showed him how to push the pulse button on my processor, it’s his favorite kitchen duty. I have several white handled restaurant quality kitchen knives. Hi Harry, Long time subscriber of Slap Your Daddy BBQ. I just bought my grill and started BBQ again after watching you videos. I even rewatch them to try out the recipes and for black belt tips. I would love to have a nice and duruable Dalstrong blade to help split ribs, cut up tri-tip, ribroast and other cuts of meats as i expand my BBQ setup. One of my first ribs recipes as a teenager was a char siu smoked with tea in oven. Another was Asian five spice dry rub with brown sugar and syrup as a binder. Love the asian fusion.

Hi Harry! My hubby watches your videos all the time in his quest for knowledge of all things BBQ! We currently do not have a Dalstrong knife. In fact, I hate to admit this, but it wasn't that long ago that I realized just how important a quality sharp knife is. We don't have an entire set of anything but now have a couple Henckel and a couple Wusthoff knives, but still no Santoku. Have watched the various Dalstrong videos and would LOVE to try one of theirs! Thanks Harry and keep on cooking! :)
as usual it is great to see a real honest review! I sure could use that knife because I was growing my fine knife collection when a family member (I won't say who because I still need to share a bed her) sold some at a garage sale! Yes, I, like most of us, had numerous knives that throughout the years would get better and better in quality. She thought it would be good to get rid of some duplicates, but she chose the wrong ones....someone has some very nice knives for very little money! Thanks!
I’ve been barbecuing all my life but I have taken it to a new level since I started watching your channel. I used to makeChar Sui from the bottle all the time because I loved it until I saw your video comparing it to the Walmart made brand. Yours with the 2000-year-old recipe is so much better. I have taken all the bottles of premade sauces that I used to have, barbeque and Asian, and throwing them out since I discovered your channel and saw your episode. The work is So worth it. One tastes chemically enhanced and one tastes natural with many layers of depth. You are selling yourself short. There’s no comparison between the two. Sorry Mr. beans I have to disagree with you for the first time. Your knife giveaway would be awesome to win but your recipes are the reason we watch your channel. I got into whetstone sharpening after watching your collab with burrfection and was able to get my cheap Walmart knife to push cut through magazine paper. I have no doubt that a knife of this caliber would hold its edge and be a massive step up for me. Also, great video and thanks for spreading bbq love!
Hey Harry great video as usual. I just started getting serious about Bbq since I’ve been in quarantine. I’ve been hooked on your videos since seeing you with TRoy and Baby Back Manic in Texas. Your videos are great and very informative explaining the science and while building great flavor profiles. I’ve been mainly doing ribs and chicken but After watching several of your brisket videos about selection and preparation, I had the courage to cook my first brisket for July 4th. I used your hot and fast method and used the Lea pearrins as a binder slap yo daddy and injected it with the grain and finished it in the oven because BTU is BTU is BTU... My family went crazy over the brisket. They are still going crazy over it. I didn’t have a god knife to cut it right and make it as professional as you do in your videos. It would be great to have an awesome knife to go with my next Harry Soo awesome brisket.
Great episode! And I have been looking at the Dalstrong knife collection to update my current and worn out knifes. Having the right tools in the kitchen/grill area makes the job and experience more enjoyable.

I've spent my entire life using very bad knives. In the last year I've started to upgrade to better knives, but find the expense of a really good knife is outside my budget. I've recently bought my first smoker and that's how I found your channel and find your advice to be very informative to learn to bbq just a little better. Thanks.

Great video Harry. Right now I'm using Wusthof knives and they are very good knives. They hold a very sharp edge too. I'd like to try another brand of knife but great knives are very expensive. Thanks again Harry for another great video.

Harry I have wanted a good knife, but haven’t brought myself to pull the trigger on something so nice. Living in Alaska I regularly prepare Moose, caribou, bear, halibut, and salmon. I am always experimenting and honing my BBQing skills. I have recently started dry and wet aging some cuts. This knife would be a great addition. As with everything I own, this knife would be used well and taken care of with the upmost appreciation and respect. I enjoy your channel and learn a lot. Thank you.

Nice video. I am glad that we have an Asian grocery store where i live so i should have no issues getting the ingredients. They are stocked! I have no expertise with really good knives as they not in my budget but when i look at your videos and others , i wonder how much easier it would be to cut fat off the ribs and briskets with a quality knife. Hey Harry, I am delighted to see this video. I had marinated some pork butt with traditional marinate and was just wondering if i could use a bbq grill to make char siu. I have used the jar before but lacks flavor and complexity as you have said. Very happy to see the comparison. Thank you for providing the history of Oyster sauce and Hoisin sauce. I grew up in HK (been living in US since 82) but still had no idea how they came about.

As a long time user and fan of Wusthof knives, that Dalstong is one sexy looking blade. I'm liking the handle shape. I could see adding some of those to my arsenal. Also love me some Char Siu ribs. Just started getting into smoking and barbecuing and started watching you since I saw you BBQ Pitmasters on TLC. I have never used a Shogun style but would make a great addition to my barbecuing knife collection I just started. I have to wonder if a high end knife would make all the difference in cutting and trimming meats compared to a $30-$60 knife. Really enjoy you videos.

I don't have much of a collection of knives all I have to use is a the big Chinese butcher knife. I used that for trimming brisket to slicing, trimming ribs to cutting them into pieces. Basically my everything use knife. Definitely love to smoke anything from chicken to beef to pork. So this knife would be a great help on preparing things with ease. Hi Harry, Those look delicious! You make me want to repeat the experiment and try both side by side myself! Since I started BBQing two years ago, I've been slowly replacing my old grocery store knives with decent ones, and my santoku is way behind now, languishing while I use better steel. Santoku profile, though, is one of my favorites, and a Dalstrong would return it to pride of place! :)

Another great video as always Harry! I like these comparison videos you do and then your judging on them. Can't tell you how i have used your information for ideas and to try new things on my smoker. As far as the knife goes? Who doesn't need another knife lol. Cutlery is definitely something that makes a difference when cutting meats. But not everyone can afford and spend a couple hundred bucks for Kitchen knife. But I wouldn't complain if one was sent to me lol
Just got into BBQ when the covid started. Your channel and Baby Back Maniac have been helping me to step my game up. I saw your video with Ryky over at Burrfection and picked up a couple wet stones to sharpen my european knives. But after watching a ton of videos on sharpening I have been really looking for a japanese knife after a lot of research, Dalstrong looks to be the leader in the bang per buck category and getting ready to pull the trigger. Then this video came along and well fingers crossed. (PS) looks like i subscribed when i was signed in to my alt account (Ronald McDonald) but I have now subscribe with my man account also

Long time fan of your channel. I have learned so much over these past few years it's absolutely incredible, and my family really appreciates my upgrades in skill level lol. I've been using cutco knives for a few years now and while they are good they aren't great. I would love to have a true chef quality knife to finally add to my collection.

I have never had a great knife like the Dalstrong. I am a firm believer that more people cut their self on a dull knife than a sharp one. I would be in seventh heaven to own a knife like a Delstrong. As always I love your videos keep up the good work
Hi Harry, have you tried using your wsm to mimic the Hong Kong siu mei ovens? It looks like with a few accessories like the hanger and vortex could do a pretty good job,but those ribs look perfect!
Yes, just take out the water pan and put a hanger frame and hang your char siu on hooks circling the fire ring. No need to goto Hongkong and bring over the siew yoke or char siu ovens!
Great video Harry! I love char siew and it was great to see another recipe comparison by you. Your first one was awesome too. I'd love to buy a Dalstrong santoku one day, but my Global santoku is going great for now. But don't give it to me - give it to someone who really needs it! It's a beautiful looking knife!
That’s a beautiful knife! My kitchen currently has an Old Hickory 10” butcher and a Chinese Carbon Steel Vegetable Cleaver (Choy Dao). I keep both in good working order with a Wicked Edge sharpener. A Santoku would make a great addition to my arsenal as a nice medium blade.
On Mr. Beans recommendation, I must try the jar sauce! Love your channel and have learned a lot. I’ve purchased a WSM based on your success and my neighbors now love my meat. I would love a beautiful Dalstrong knife as it would definitely enhance my culinary experience and looks awesome.
I've never tried the jar myself nor have I used a pit to cook this style of rib (for me the BTU was from a conventional gas oven). If you used the jar, you could add to the flavor complexity of the rib. What few ingredients would you try (please try to limit to two or three ingredients)? That giveaway knife is very high end compared to the one I use from Sam's Club. Thanks for the comparison!! Just a side note - Did Bryson get to judge the ribs and what was his assessment, if he did?
I can't tell you how many times I've had a Dalstrong knife in my online shopping cart but haven't pulled the trigger... If I were to be so lucky as to receive an amazing knife such of that it would help me spread BBQ love, as I have been doing with my friends for many months now! Hey Harry, John from Melbourne again. Going to try my hand at your Char Siew ribs tomorrow. Just wanted to check with you if you still used the same cooking method as usual. 275F for 2.15 + 1.15 + 0.05? I noticed your ribs looked quite dark underneath, which I believe is from the caramelisation of the sugars from the sauce. I assume they were cooked perfectly fine using the tried and trusted method of yours? Thanks mate. 👍
I would go lower temps 225F when there is a lot of sugar in the marinade or rub. Be sure to say hello to Lance Rosen who is my Melbourne student who runs Big Boy BBQ

Hey Harry I just bought a Dalstrong paring(phantom)&boning(gladiator)from your recommendations and others.It seems among the BBQ Pitmasters it's either Dalstrong or Shun.I just sliced up a raw packer brisket(for grinding )using the Dalstrong Boning Knife.The Santoku would have made the job much easier.

I'm in the process of buying new knives as my old ones are a cheap set and it's time to grow up and buy something that cuts, not shred. Been eyeing the Dalstrong as they seem solid and have a great reputation. That knife would be a great first piece in my quest for new knives.

I don't have anything nice other than a pretty nice nakiri. Didn't do as good of a job sharpening them on the whetstones but at least they're sharper than they were before! I think the honey is a complex sweetener. The red tofu helps as the fermented tofu has a lot of natural MSG
Harry I’m continuing to enjoy all of your videos. I’ve even got my ten month old little boy watching along with me. He love helping daddy in the kitchen already. Showed him how to push the pulse button on my processor, it’s his favorite kitchen duty. I have several white handled restaurant quality kitchen knives. Hi Harry, Long time subscriber of Slap Your Daddy BBQ. I just bought my grill and started BBQ again after watching you videos. I even rewatch them to try out the recipes and for black belt tips. I would love to have a nice and duruable Dalstrong blade to help split ribs, cut up tri-tip, ribroast and other cuts of meats as i expand my BBQ setup.
One of my first ribs recipes as a teenager was a char siu smoked with tea in oven. Another was Asian five spice dry rub with brown sugar and syrup as a binder. Love the asian fusion.

Hi Harry! My hubby watches your videos all the time in his quest for knowledge of all things BBQ! We currently do not have a Dalstrong knife. In fact, I hate to admit this, but it wasn't that long ago that I realized just how important a quality sharp knife is. We don't have an entire set of anything but now have a couple Henckel and a couple Wusthoff knives, but still no Santoku. Have watched the various Dalstrong videos and would LOVE to try one of theirs! Thanks Harry and keep on cooking! :)
as usual it is great to see a real honest review! I sure could use that knife because I was growing my fine knife collection when a family member (I won't say who because I still need to share a bed her) sold some at a garage sale! Yes, I, like most of us, had numerous knives that throughout the years would get better and better in quality. She thought it would be good to get rid of some duplicates, but she chose the wrong ones....someone has some very nice knives for very little money! Thanks!

I used to makeChar Sui from the bottle all the time because I loved it until I saw your video comparing it to the Walmart made brand. Yours with the 2000-year-old recipe is so much better. I have taken all the bottles of premade sauces that I used to have, barbeque and Asian, and throwing them out since I discovered your channel and saw your episode. The work is So worth it. One tastes chemically enhanced and one tastes natural with many layers of depth. You are selling yourself short. There’s no comparison between the two. Sorry Mr. beans I have to disagree with you for the first time. Your knife giveaway would be awesome to win but your recipes are the reason we watch your channel. I got into whetstone sharpening after watching your collab with burrfection and was able to get my cheap Walmart knife to push cut through magazine paper. I have no doubt that a knife of this caliber would hold its edge and be a massive step up for me. Also, great video and thanks for spreading bbq love!

I’ve been mainly doing ribs and chicken but After watching several of your brisket videos about selection and preparation, I had the courage to cook my first brisket for July 4th. I used your hot and fast method and used the Lea pearrins as a binder slap yo daddy and injected it with the grain and finished it in the oven because BTU is BTU is BTU...
My family went crazy over the brisket. They are still going crazy over it. I didn’t have a god knife to cut it right and make it as professional as you do in your videos. It would be great to have an awesome knife to go with my next Harry Soo awesome brisket.

I've spent my entire life using very bad knives. In the last year I've started to upgrade to better knives, but find the expense of a really good knife is outside my budget. Harry I have wanted a good knife, but haven’t brought myself to pull the trigger on something so nice. Living in Alaska I regularly prepare Moose, caribou, bear, halibut, and salmon. I am always experimenting and honing my BBQing skills. I have recently started dry and wet aging some cuts. This knife would be a great addition. As with everything I own, this knife would be used well and taken care of with the upmost appreciation and respect. I enjoy your channel and learn a lot. Thank you.

Nice video. I am glad that we have an Asian grocery store where i live so i should have no issues getting the ingredients. They are stocked! I have no expertise with really good knives as they not in my budget but when i look at your videos and others , i wonder how much easier it would be to cut fat off the ribs and briskets with a

Hey Harry, I am delighted to see this video. I had marinated some pork butt with traditional marinate and was just wondering if i could use a bbq grill to make char siu. I have used the jar before but lacks flavor and complexity as you have said. Very happy to see the comparison. Thank you for providing the history of Oyster sauce and Hoisin sauce. I grew up in HK (been living in US since 82) but still had no idea how they came about.

As a long time user and fan of Wusthof knives, that Dalstong is one sexy looking blade. I'm liking the handle shape. I could see adding some of those to my arsenal. Also love me some Char Siu ribs. I've only ever had them at restaurants, but after seeing you do the throw down, I'm adding this to my rotation.

Just started getting into smoking and barbecuing and started watching you since I saw you BBQ Pitmasters on TLC. I have never used a Shogun style but would make a great addition to my barbecuing knife collection I just started. I have to wonder if a high end knife would make all the difference in cutting and trimming meats compared to a $30-$60 knife. Really enjoy you videos.

I don't have much of a collection of knives all I have to use is a the big Chinese butcher knife. I used that for trimming brisket to slicing, trimming ribs to cutting them into pieces. Basically my everything use knife. Definitely love to smoke anything from chicken to beef to pork. So this knife would be a great help on preparing things with ease.

Hi Harry, Those look delicious! You make me want to repeat the experiment and try both side by side myself! Since I started BBQing two years ago, I've been slowly replacing my old grocery store knives with decent ones, and my santoku is way behind now, languishing while I use better steel. Santoku profile, though, is one of my favorites, and a Dalstrong would return it to pride of place! :)

Another great video as always Harry! I like these comparison videos you do and then your judging on them. Can't tell you how i have used your information for ideas and to try new things on my smoker. As far as the knife goes? Who doesn't need another knife lol. Cutlery is definitely something that makes a difference when cutting meats. But not everyone can afford and spend a couple hundred bucks for Kitchen knife. But I wouldn't complain if one was sent to me lol

Just got into BBQ when the covid started. Your channel and Baby Back Maniac have been helping me to step my game up. I saw your video with Ryky over at Burrfection and picked up a couple wet stones to sharpen my european knives. But after watching a ton of videos on sharpening I have been really looking for a japanese knife after a lot of research, Dalstrong looks to be the leader in the bang per buck category and getting ready to pull the trigger. Then this video came along and well fingers crossed.

Long time fan of your channel. I have learned so much over these past few years it's absolutely incredible, and my family really appreciates my upgrades in skill level lol. I've been using cutco knives for a few years now and while they are good they aren't great. I would love to have a true chef quality knife to finally add to my collection.

I have never had a great knife like the Dalstrong. I am a firm believer that more people cut their self on a dull knife than a sharp one. I would be in seventh heaven to own a knife like a Delstrong. As always I love your videos keep up the good work

Hi Harry, have you tried using your wsm to mimic the Hong Kong siu mei ovens? It looks like with a few accessories like the hanger and vortex could do a pretty good job,but those ribs look perfect!
Yes, just take out the water pan and put a hanger frame and hang your char siu on hooks circling the fire ring. No need to goto Hongkong and bring over the siew yoke or char siu ovens!
Great video Harry! I love char siew and it was great to see another recipe comparison by you. Your first one was awesome too. I'd love to buy a Dalstrong santoku one day, but my Global santoku is going great for now. But don't give it to me - give it to someone who really needs it! It's a beautiful looking knife!
That’s a beautiful knife! My kitchen currently has an Old Hickory 10” butcher and a Chinese Carbon Steel Vegetable Cleaver (Choy Dao). I keep both in good working order with a Wicked Edge sharpener. A Santoku would make a great addition to my arsenal as a nice medium blade.

On Mr. Beans recommendation, I must try the jar sauce! Love your channel and have learned a lot. I’ve purchased a WSM based on your success and my neighbors now love my meat. I would love a beautiful Dalstrong knife as it would definitely enhance my culinary experience and looks awesome.
I've never tried the jar myself nor have I used a pit to cook this style of rib (for me the BTU was from a conventional gas oven). If you used the jar, you could add to the flavor complexity of the rib. What few ingredients would you try (please try to limit to two or three ingredients)? That giveaway knife is very high end compared to the one I use from Sam's Club. Thanks for the comparison!! Just a side note - Did Bryson get to judge the ribs and what was his assessment, if he did?
I can't tell you how many times I've had a Dalstrong knife in my online shopping cart but haven't pulled the trigger... If I were to be so lucky as to receive an amazing knife such of that it would help me spread BBQ love, as I have been doing with my friends for many months now! They call me asking for advice, and I either tell them or I direct them to your videos! A new knife would help me take my BBQ game to the next level, with your help of course! Hey Harry, John from Melbourne again. Going to try my hand at your Char Siew ribs tomorrow. Just wanted to check with you if you still used the same cooking method as usual. 275F for 2.15 + 1.15 + 0.05? I noticed your ribs looked quite dark underneath, which I believe is from the caramelisation of the sugars from the sauce. I assume they were cooked perfectly fine using the tried and trusted method of yours? Thanks mate. 👍
I would go lower temps 225F when there is a lot of sugar in the marinade or rub. Be sure to say hello to Lance Rosen who is my Melbourne student who runs Big Boy BBQ
My husband just loves your channel and has learned a lot from you! I believe this knife will help my husband with his grilling game. Hey Harry I just bought a Dalstrong paring(phantom)&boning(gladiator)from your recommendations and others.It seems among the BBQ Pitmasters it's either Dalstrong or Shun.I just sliced up a raw packer brisket(for grinding )using the Dalstrong Boning Knife.The Santoku would have made the job much easier.

I'm in the process of buying new knives as my old ones are a cheap set and it's time to grow up and buy something that cuts, not shred. Been eyeing the Dalstrong as they seem solid and have a great reputation. That knife would be a great first piece in my quest for new knives.

What I would like to know is if using the jar is there 1 or 2 simple ingredients you would add to make it more complex? I am a huge fan of Sandra Lee’s semi home made where I can use ready bought supermarket stuff and just modify it a bit to make it my own or better.
