Okay, so having tried this, I wanna say that these certainly aren't terrible, but, to me, the texture is akin to what you get when you leave out a very sugary crispy cookie for a while and it gets quite stale. There is like some degree of the crispness still there, but the vast majority of it has faded. I did enjoy these as their own thing, and I don't think it's a bad recipe, but I think some things are just really hard to accomplish while still making such a macros-friendly final product, so moderate your expectations if you make them. It's finished products like these that really make me wish I had a freeze-dryer to try forcing a magical end result, but just using the twice bake, it's still not a bad outcome. They have a snap and some crispness on the outermost extremity, but it's still kind of a chewy texture, in my opinion. I tried to follow the recipe perfectly, so I might have the wrong impression, but that's it so far.

I'm gonna give these another run and just go for a longer low-temp first bake and probably tinker with the second bake to see if my oven handles better at different settings. An easier way to flatten the cookies: place another piece of parchment paper over the dough, then use the bottom of a glass to flatten them out. I believe in working smart, not hard :-)
Heartshorn, or Baker’s ammonia, makes a very crisp cookie. Twice baking, like as for biscotti, works too. I hate those hard, tasteless crumbly shortbread types, like those pecan sandies. But a chewy cookie? Only if it’s chocolate chip. I love ginger snaps!

(Heck, I don’t even like that soft meringue, but I do love crispy meringue cookies, I wonder if you could use that crispy lo-cal (erythritol) meringue as the crust?!?! Then a low cal sharp lemony lemon curd on top, wow! Or a low calorie General Tso’s sauce?? I think it’s mostly soy sauce and sugar, steeped with peppers, so maybe using erythritol would work? The first time I tried this they ended up spongey and black -- so I tried making it second time, shortening the cooking time and they weren't burn but still spongey. Cook them lower temp for longer and let them cool completely. You can even throw them in the freezer to cool fast which makes them crispier. Is the truvia a 1:1 sugar sub that contains erythritol? If not it might not work as well as pure erythritol
These will taste awesome but damn. Erithyritol + Oat Fibre would turn your stomach inside out. I added 15g of erithyritol to my shake the other day and was almost crippled with the bloat.

From what I read online Truvia is 1-1 sub for Erythritol. Next time I make these I’ll try baking for longer at lower temp before upping to 400. Thanks

Baking with pb2 vs casein is very different bc casein is so absorbent while pb2 gets crispier bc it’s peanut flour. You could sub almond flour

The fiber will cause stomach issues and there is no protein that the body can absorb. It's just a clickbait title. Overall unhealthy.

It's supposed to be a treat, not a main meal. Unless you have digestion issues, eating these cookies with a balanced diet won't cause harm.
