Me too! The 12 year old Appleton is not a bad choice but I had some Black Strap rum and used that and I really prefer those maple notes. I also made an acid adjusted version and it turned out even better! I'm slowly making my way through that damn Campari bottle lol
The Bitter Mai Tai is such a crushable drink. The relateively small amount of Smith and Cross does a lot of heavy lifting in it without overpowering the other ingredients.
Your elevated Paloma recipe with with the grapefruit cordial is another excellent example of a campari cocktail for people who hate campari. Really an awesome drink has helped me get a couple people more into making cocktails

I regularly make the enzoni now. Usually with 8-10 grapes because I still find Campari very bitter. I’ve also really enjoyed substituting half a kiwi for appx 5 grapes. I make one drink with a whole kiwi instead of grapes too it’s a wonderful alternative

I made Negronis with Toby Maloney. He introduced me to Cappaletti as an alternative to Campari. It's got a similar flavor profile, but the bitterness and dryness is toned down a bit. Makes it a more palatable cocktail.
I’m a big Campari fan, I love the complexity of it. I recently had a really good Campari based tiki cocktail at a resort in the Bahamas. I had never heard of it before, It was called “Call Me Coral”. It was a beautiful coral color when mixed. They basically took a pina coloda base (cream of coconut, pineapple, simple syrup) and added Rum, Campari, with some tangerine juice. Seems to be riff on Jungle bird but creamier. I’ve scoured the internet to find a recipe to recreate it at home but haven’t found one yet. Might be something you can take a crack at Steve!
The lovely pink color on two of the drinks made me think of grapefruit, and I wonder if you have any favorites that combine the two (Campari and grapefruit)? I’m sure that’ll turn off the bitter-sensitive, but I _like_ a certain amount of bitter, balanced out with sweet, acid, etc. I’m certain there’s a refreshing cocktail to be found.

My new favorite drink (with Campari) is now the Enzoni but with 9-10 muddled grapes. When I get enough grape I don’t mind the bitter Campari. And that has to be one of my favorite colors for a drink.

After34 years on this planet of which more than 11 years in the industy, I´m still dreaded by Campari, I try every now and then to appreciate it, but it´s something I haven´t really managed, yet.... Still very nice cocktails though, Steve!! I might give one of them a try someday and I´ll keep you updated about whether or not my palette is developing a bit more into the Campari direction ;-)
I never realized until now when I got my first shaker how hard it's to smile while shaking that damn thing, but I won't quit until I am as confident with the drinks as Steve. So far I have managed to create some tasty cocktails with these recipes but the execution has left something to be desired, as the one woman government also known as my dear wife will witness while cleaning up the kitchen out of all excess liquor and sticky sugars, but so far judging from how I am allowed to keep practicing the hobby while serving her some tasty cocktails we are still on the net positive.
The ultimate cocktail for me to win people over is the "Chestnut Cup". It is 30/30/30/22.5 ml Gin/Camapri/Lemon juice/orgeat. It is the perfect combination of sweet, sour and bitter. And if you want to tiki that up, make Bermuda 100s.
I'd say the Jungle Bird is probably the best cocktail for people to get into Campari. Back when I used to not like Campari (I can't even imagine such a cardinal sin, now) I still liked Jungle Birds. The tropical flavors and sweetness helps cut the intensity. Nowadays I love Negronis, Boulevardiers, and Bitter Mai Tais, but it's all probably thanks to starting with the Jungle Bird.

The "gateway trick" I've used to convert some Campari-haters around me is to make negronis with 50/50 Campari and Aperol (sometimes even heavier on Aperol), and gradually use less and less Aperol ;-)
Ive made straight Aperol Negronis for my girlfriend who dislikes Campari, but it's still too bitter for her. So i guess i will try some of the drinks from this video ;)
@@Laugk I tried that when I was out of Campari but had Aperol, I found it was unbalanced and was shocked that it just didn’t work. But the half and half trick and/or adding some simple or even elderflower could help, just a thought if you want her to try again 😊

I still think Campari is disgusting but by changing the ratios of the Bitter Mai Tai to 3 cl campari : 3 cl dark rum : 1.5 cl triple sec* : 3 cl lime juice : 2 cl amaretto** I got a drink I find quite tolerable. * I figure cointreau can sub for dry curacao which I can't easily buy here. ** I cba to make almond syrup and it's next to impossible to buy premade here so I assume disaronno works as a sub. (3 cl = 1 oz)
With my bitter-averse palate, I prefer to stick with the full 4 oz of pineapple juice. And I use a heavy Jamaican rum to stand up to everything. For the record, I think Cruzan Black Strap is pretty much the worst rum for a Jungle Bird. To my palate, it makes the drink taste like industrial waste
Funny enough, coming from someone biter-averse, I find the Bitter Mai Tai much LESS bitter than the Jungle Bird, even with a full 4 oz of pineapple juice. Something about my palate makes me find PF Dry Curaçao Mai Tais extremely sweet, and obviously that much more so with 3/4 oz or orgeat. So to me, the bitter Mai Tai is perfectly balanced: the Campari undoes the excessive sweetness of the drink, and the Curaçao and orgeat balance the Campari's bitterness to the point that the drink doesn't taste bitter to me at all

My go to drink is a Boulevardier; so I like Campari. I also like Mai Tai’s, so I’ll have to try the bitter version!
Enzoni is such a good cocktail. No one has heard of it here in Japan, so whenever I go to a bar, I order it and tell them how to make it.

As well as splitting the campari with aperol, I find that a small pinch of salt helps temper the bitterness of campari

What dark rum brand is recommended for the first drink
Cruzan blackstrap if you can get it… it’s not available here in Australia unfortunately. Otherwise you could try Coruba.
