    I just tried and made some nem chua using this shortcut recipe and mine came out great! I made 2 batches. The first one I followed exactly the recipe and it came out nicely. The 2nd one I used 2 cups of vinegar and added in 1/2 tbsp of fish sauce and that batch came out more flavorful to me and tasted more like the nem chua heo I used to get for banh trang tron when I was still in Vietnam. Also I wrapped them with banana leaves so they came out just like the real nem chua.

    I swear, you are a culinary genius, Trang! I LOVE nem chua and have seen recipes for making it the "traditional" way. However, I'm one of those people whom never got over my fear of handling raw meat, much less curing it like nem chua is done so this recipe is awesome on so many levels. It really does look like the real nem chua, but yours is prettier! I love how you made the rolls/logs. You make it look so easy, beautiful, and perfect. I'm beginning to think you are a perfectionist in everything...someone who is keen to all the little details. :) Thanks for sharing such an amazing recipe! BTW, always wanted to tell you that you have such beautiful hands/fingers. Your nails are always perfectly done and the color is subtle, yet so pretty. :)

      Doodah Gurl Hi DG, thank for your compliments but I can't take the credit. This is my Mom's recipe and she's made it this way for as long as I can remember. She would use deli ham and cut it into really thin slivers by hand. She definitely didn't want us kids eating raw meat. Lol...glad you like my nails...since that's all you see of me most of the time, I figured they should be presentable :D

    Thank you for sharing this receipe. I've heart of making nem chua using raw pork but have not give it a try. Now see this make me wanted to try my first attempt. Just have to get some pork skin and rau ram, which is not available in my city. But will work on this project for sure. Btw, I came here after the fermented bean curd receipe.

    I'm not sure if this tastes like the original Vietnamese "nem chua", which is made of raw meat. But seeing how your "nem chua" firms, I really wanna give it a try. Nem chua made of ham, sounds weird but I think it's yummy! Thanks for a creative recipe!
    Btw, I really love your voice, I practice listening English by watching your videos. I love cooking, too!

      I don't think the ham she used in the video is raw or rare, though it may look so. Also, ham often has smoked flavor so I just wonder how the nem chua made of ham smells like :)

      Bùi Kim Anh Oh no! Yes the ham in this video portrayed is cooked, but what I meant to say is my reference of steak.. Americans seem to like to to eat it medium rare or rare so if you can eat raw steak, nem chua is pretty much a form of raw meat except the yeast and salt pretty much killed most of the bacteria if you're afraid of getting infected. For the most part, I would stay away from raw meat as much as possible because there is that chance of e.coli etc..Foodborne illnesses are preventable if one takes certain precautionary measures.

    Hi chị, em lại làm thành công nem chua do chị hướng dẫn nữa rồi. em sử dung có 1 & 1/4 cup nước vì em muốn nem chua nhiều hơn. Nem có vị giống như nem chua Huế, rất ngon. Cám ơn chị nhiều

    I was wondering if you could use any type of ham, instead of the thick sliced ones with skin and lots of fat on like the ones shown? What about those pre-packaged thinly sliced hams with no skin and little fat?

    made this yesterday, turned out ok in term of texture, but we found it to be much too sweet? next time ill use way less sugar, and add chilies to the mixture and more fish sauce...

      Hi em, the heat may be too high causing the liquid to be extracted. Reduce the heat and just warm up the ham and shredded pork skin. Wrap while everything is still warm. I hope you'll give it another try. Good Luck and please stop back and let me know how it turns out for you. :)

    I like Nem Chua but I don't like to eat the raw pork and after I get your recipe and I tried it and I am so surprised because it's so yummy. Thank you so much your recipes it's very simple and easy to follow your step by step . Try it and you guy will love it.

    The best fermented pork is from France made by Oriental Kitchen. Nowhere in the US, from California to Texas, or in Vietnam can beat the taste of Nem Chua from France. Odd to say, but France has the best Nem Chua.

    I think if you using vinegar in this recipe is better and safer than using phen chua (rock sour). I don't know how to call its name. But thanks for sharing the video!

    I WACTHED THIS BEING MADE ON TRAVEL CHANNEL AND THEY USED FERMENTED STICKY RICE AND LEFT IT OUT IN THE SUN FOR 3 DAYS. I LIKE YOUR VERSION BECAUSE IM NOT A CRAZY ABOUT EATING RAW MEAT. BUT I DO WANT TO KNOW IF YOU HAVE THE RECIPE FOR FERMENTED STICKY RICE AND WILL YOU POST IT ? THANK YOU

    chị ơi, em ở việt nam em ra ngoài chợ mua thịt xay mà xay 1 lần có làm được không chị hay phải xay 2-3 lần ạ và về em không có máy trộn để bàn em chỉ có máy đánh trứng vs máy xay sinh tố thì có dùng quết được thịt k ạ hay chỉ cần lấy thịt xay về trộn nguyên liệu thôi ạ. Em cảm ơn chị!

      +nguyen hoang lan anh Hi em, có phải em muốn nói là thịt heo tươi ở VN khi mua người ta sẽ xay cho mình? Không phải đâu em. Cooked Ham ở bên Mỹ là thịt đã cook/nấu sẵn sàng để ăn. Thịt này ở VN người ta gọi là Jambon dùng để cho vào bánh mì thịt nguội. Nếu không có máy xay em có thể cắt lát mỏng jambon, rồi sắt nhỏ lại và da heo cũng làm như jambon, khi cuốn phải thật chat tay nem mới dính lại với nhau. Chúc em thành công!

    I used fully cooked ham and soak it for 9 hours. But when i did the log, it keep on falling apart. What did i do wrong??

      +Anna Nguyen Hi Anna, do you think you overcooked the ham and pork skin? Cooking over Low heat activates the gelatin in the pork skin and makes the liquid which holds everything together once chilled. If you overcook, there's no liquid left and nothing to hold the ham and pork together.

      Hi, You can use bean thread noodle as a substitute for pork skin but the pork while not solidify as well because it doesn't have the gelatin from the pork skin. It's worth a try!

    hehehe... em mà làm cái món này thì nhất quyết không dùn pork skin. Thấy bên VN họ tẩy da heo thối bằng chemical cho trắng và khử mùi thành ra sợ :))). Dùng ham, good idea chị.
