- Beef Sambousek is a crispy meat pie, typically served as a mezze or appetizer. These delicious pies are loaded with spiced ground beef, onions, pine nuts and fried to golden perfection.

For the Sambousek dough: ( the recipe will serve 35-40 sambousek)
1 1/2 cups all purpose flour (280 g)
3 tbsp. (50 g ) corn starch (the corn starch will make sambousek more crispy)
1/2 teaspoon Salt
1/2 cup of water (140 ml)
4 tbsp. (60 ml) vegetable oil

Meat stuffing sambousek :
250 g. Lamb meat ( you can substitute with beef )
120 g onion ( one medium onion )
2 cloves garlic
salt, black pepper, 7 spice, cinnamon
50 g pine nuts ( roasted)

Cheese stuffing sambousek :
70 g akawi cheese
70 g mozzarella cheese
2 tbsp. mint
or you can use most of white kind of cheeses with less moist as possible

1. In a bowl combine together all purpose flour + corn starch + salt and mix together. Add vegetable oil and run with your hands till the dough will get a crumbly texture.
2. Add water and knead the dough for 1-2 minutes, the dough for sambousek will not be sticky. once it comes together , let the dough rest for 30 minutes up to one hour.
3. Meanwhile prepare the stuffing.
4. Roll the dough 2-3 mm thickness and cut into rounds. Fill with the stuffing and seal the edges the way it shown on the video. ( make sure to pinch the edges few times)
5. heat the oil for frying on High and reduce to Medium-Low. Fry in a batches till golden brown sambousek.
Be sure to reduce the heat on low while frying the cheese sambousek, because the high heat can make cheese sambousek to open.

I use to my grand ma to do this at home. but she use to bake them instead of frying the. Did you ever had tried to do that?
Hi, sure your grand ma did more healthy way of sambousek, you just brush lightly with oil sambusek ( or use the spray oil) and bake for 15 mins in a preheated oven.
