Reason no one makes them in Argentina is because you can buy the dough ready to fill at most grocery shops and they're great quality. I do appreciate the recipe though as I live in Thailand and I miss the empanadas from back home
Plus, if you're making different fillings it's pretty time consuming. I always buy pre made dough and I only do 1 or 2 fillings. Otherwise, it's a lot of work.

My grandad used to fried them in fat, with raisins, and minced meat, and they were SO JUICY, but he used to buy the dough from a specific baker who used to live by his street, the dough was flaky and dry. Best empanadas ever. People who cook for their jobs develop calluses that make it possible to touch very hot things for short periods of time. I worked in a kitchen and I'm still able to do it somewhat.

Really helps cooks (esp homecooks) understand why certain steps need to be done, and therefore helps build confidence in the kitchen. Love this.
