Episode 5: The Classic Smash Burger

- Hi All. Today, I’m cooking a Classic Smash Burger. I love a burger, and for me this is the only way to cook a burger. 🍔 They’re so juicy you could say it’s the perfect burger.
There’s so much more flavour than a regular burger, due to the doubling of the Maillard Reaction.
Try it yourself, but beware! Once you’ve had Smash, there’s no going back.

You can use any burger sauce; however, the one I made was:
1 Tbsp Mayonnaise
1 Tbsp American Mustard
1 Tbsp Ketchup
1 Tbsp Chilli Sauce (Whatever, your favourite)

when i flip mine over it doesnt have that brown cooked layer, its more grey than anything! still tastes good but what am i doing wrong is it not hot enough or not leaving it on long enough?
It could be that your cooking surface isn’t hot enough. I tend to get my plancha around 200 to 250c. I think it’s a case of trying different things as all BBQ’s behave differently. Let me know how you get on. 🔥🍔
@@MartinCooksOutdoors thanks I'm doing it on hob using cast iron pan but will try it but hotter and leave it on but longer before putting patty on.
Well, the result looks tasty. I’m sure it is. You’re having some fun it seems. Not to be negatively critical, just analytical (a professional chef habit), a few things to note.
-you need to smash all the patties. A couple didn’t smash very much.
-don’t just smash, feather the edges out even a bit more. You want them to crisp up.
Season the meat well on the tips of the balls before putting on your plancha, and put seasoned side down. Season the tops of patties well too.
-get the final carsmelization on the first side before turning. Try to avoid flipping the burger again.
Your cooking rig looks cool, and the ingredients you used are great. The pickled jalapeños, a nice touch.
Try doing a riff on smash burger nect. The Oklahoma onion burger. You’ll enjoy it.

Thanks for the commentary, I’ve noted you comments. I’m aware of Oklahoma Onion Burgers but never got round to making them. Trouble is, I’ve got so many ideas for videos but not enough time to make them all. Keep watching. 🔥🍔

you dont need to season both sides on smash burger because so thin
You only need to season one side. They come out delicious 🔥🍔

So you basically made a magic ball of mince meat (ground beef you swallows call it) and use a measure of slow pressing down on this ball to make a Smash Burger which technically everyone else would call a Burger Pattie, but slowly using SMASH force to SLOWLY squish it into a SMASH Burger pattie. My gosh. Is that the Mail Order Lard from the Postie?

@@MartinCooksOutdoors I think autocorrect got me, but it was using a press to press the meat into a pattie. I mean why would you cook it in a round ball meatball form if you are going to press it to a pattie and release all the good fats etc.
@@spaaggetii If you use 20% fat beef mince, you don’t lose any fat. Also if you smash it , you get more Mallaird Reaction per surface area which equals more flavour.

Mate give up on cooking - making a burger without any sauce , especially 2 burgers with nothing between. They look dry and with no mayo on lettuce even will be tasteless - back to the drawing board
Are you commenting on the right video? There was sauce, and there was cheese between the burgers, and there was lettuce. However, you have the right to your opinion, so I look forward to your video showing me how to cook a smash burger properly.
