I found it’s very funny that Amy kept speaking Putonghua to the chef and he kept replying in Cantonese 😂 and Viv’s Aussie accent is stronger than Amy’s 😂 Viv is good looking and fun. Wok hei is very crucial in Cantonese cuisine.
Hong Kong people are not good at speaking putonghua. That’s why.
My friend Mike lives in the Appalachian mountains in West North Carolina. He can only speak a Southern Accent, pungent in my opinion. When someone speaks Queens English to him, he can understand but he will respond with his Southern Accent.
To be what I’m understanding is that with that high temp of cooking allows the food to cook fully meanwhile retain the moisture level within the food which makes the Wok Hei so important

@@icodestuff6241 I learned both Cantonese and Mandarin. Then I went to Shanghai, I understood zero what the locals were talking about. Then I spent 2 years and learned Shanghai dialect. Then I went to Nanjing nearby, the locals spoke in a way similar to Shanghai, but I still understood zero. I imagine Yangzhou would speak something understandable. No, I understood zero. Then I went to Wenzhou, oh my world, they spoke a strange dialect that I was back to zero again. That is why, everyone learns Putonghua or Guoyu.
Black bean dace a very dearly loved food for many chinese families starting from childhood..my favourite congee food!
Still remember as a child when the family don't cook for the day we grab this can serve with rice to fill our tummy. The plain rice and this goes well together, yes congee too.
I was introduced when I was a child because my step mother was Chinese. In fact was trying to buy it today but lucked out.

Black bean dace is also commonly used to stir fry with green veggies 🥬. In my family, we pour the oil from the dace and stir fry some garlic in the oil, then put the veggie in, and finally break the dace up and stir fry it with everything else. It takes the veggie dish to another level

Ive been binge watching this channel for quite some time and I just wanted to comment that I really enjoy blondies ethos when it comes to eating food. No matter where she is she eat with such joy and like unpretentiousness. One of my fav clips of blondie is her squatting on a river bank in yunnan province eating food with her hands. Im going to china next year to study abroad and ive been warned to only stay within like the central city and my campus, basically a more sanitised version of china, but your food adventures have made me super excited to really visit the country.

The black beans from the black bean sauce is made by fermenting and salting black soybeans. The black type soybean is most commonly used and the process turns the beans soft, and mostly semi-dry.
My husband is from Guangzhou, as soon as black bean dace was mentioned ‘in the oval tin’ was my first thought….and there you are showing what is in my pantry right now! The fired dace fish always goes together with rice porridge. The porridge must be very watery. In Malaysia the local always goes with it.
i just got home from Hong Kong a few days ago, had a dai pai dong in Mong Kok, and because I was by myself a table of gentlemen forced me to join and wow what an honor I had so many seafood dishes I wouldn't have thought to get. I hope I'll be back soon

Yes, you can only have it at restaurant like these where they have the set up for it. Is a combination of equipment and skill to cook in order to achieve the heat to bring out the food favour.

Same here, mum sometimes resort including a can of black bean dace when she wasn't in the mood to cook. After seeing this will get one next time at the Asian grocery
black bean dace... you can boil egg noodle, drain it then pour the oil in the can with black beans and mix it... crush the fish and mixing it in as well to make a very delish lo mein

Hi Amy good job for another amazing video! Just wanted to point out a small dining cultural difference from the north and south, that is in Cantonese culture (at least from the culture I grew up with)we don’t put food in that plate lol we usually have them in our bowl. That plate is called 骨碟 which is for bones (from fish or chicken) and other food waste. In some restaurants, servers will even replace the plate with a new and clean one if they see it is full:) not a biggie but I think that would be something interesting to know :)

Circle K is a convenience store chain in the US! Apparently they also have locations in Canada, Europe and Hong Kong. And digging for razor clams is a common family activity up here in Oregon! Although they do occasionally have to close down the recreational clamdigging for health reasons when there are high amounts of biotoxins in the algae.

Black bean dace taste better when its warm. I discovered it a few years ago. It's really good when you cook it with rice in a rice cooker. It's not some culinary experience but it's hearty and has a ton of msg.
