      I dont get the dislikes. Im celiac, my SIS is vegan and my MIL has recently been diagnosed with pre-diabetes. I still like to bake, so... I've been trying new things and this seems amazing

    I made muffins from this recipe and they came out AMAZING!!! 2 cups of almond flour for the 200g, 5 plus 3/4th tablespoons of coconut flour for the 45g, and 6 tablespoons of coconut oil for the 80g. Your welcome! 😋

    I made this cake twice.
    The first time exactly according to the instructions. It was tasty but I lacked seasoning. Maybe because I'm used to Dutch/Scandinavian carrot cakes that have more hot spices.
    And I didn't feel the carrot enough either.
    The second time I already felt more confident to change a little -
    To reduce carbs, I replaced the almond flour with ground walnuts.
    In addition to cinnamon, I added freshly grated ginger, half a teaspoon of cardamom and half a teaspoon of ground cloves.
    Instead of one cup of grated carrot, I added 2 cups.
    Since ground nuts are more moist than almond flour and I put more carrot so I added another 2 tablespoons of dry coconut and 2 tablespoons of oat fiber.
    The second time I gave up the cream because I went a little overboard with the calories recently...
    I recommend these changes, the spicy version is tastier not only to me but to everyone who has tasted it.

    I made this cake. Don't like cinnamon, so substituted nutmeg. Still delicious and very filling. Next time, I will add walnuts and some grated ginger. What a great recipe. I would serve this to non-keto people with confidence. YUM!

      Beena, measuring by cups, how much will be 200 GM almond flour? And the same question for the coconut flour please.

    Be careful in the US because "coconut cream" or "cream of coconut" in tins usually has lots of added sugar and is intended for cocktails. Where as "coconut milk" usually has no added sugar but still has the creamy coconut solids on the top.

      Actually coconut cream doesn’t have any sugar added. Only the cream of coconut has it.

      In CA you can get good 0 carb canned coconut milk for .99 a can at Grocery Outlet.

    This is a bakery quality low carb carrot cake. My only complaint is the lack of ginger in the cake; I was so hyperfocused on following the instructions, I didn't notice there was no ginger until after the cake was in the oven. I much prefer having ginger in the cake, but even as a topping, it is quite delicious. Super rich!! You only need a small sliver to feel satiated, it's very filling.

    Baked this last night ready for a lunch with a friend tomorrow. I've not put cream on yet, going to wait until nearer the time but cut them into individual portions ready to stucking with cream! Just been nibbling the ends I won't be serving - just to check what it was like. Texture is a little less spongy obviously but it tasted just as good if not better than regular carrot cake I've had, really looking forward to having this with cream but it's still a very good cake without if anyone likes a plain piece. Will bake this again, thank you. 🙏 By the way, I've been baking one or two recipes from your videos every day the past week, and quickly I've already gone through a whole kilo of almond flour already. Keep going back in the kitchen thinking what else can I make today...cannot stop baking. 🧡

    If you chill the tins upside down, when you open them you can just pour the water off the top.

    I made this yesterday. Only had superfine almond flour in the pantry. So it was a little dense but it was delicious!
    Definitely a fan of Heavenly Fan! Love that there’s a written list of ingredients used. Love the videos. Calming, down to earth, personable. She belongs in food channel!
    Absolutely my favorite UA-cam channel for vegan recipes.

    I LOVE THIS CHANNEL! I'm going vegan keto and have to be gluten free due to my Hashimotos Thyroiditis Autoimmune condition. So excited I found your channel! 7 days into Vegan Keto and I've lost 8 pounds. Going to go for 20 days and at day 7..im kinda wanting more elaborate meals. I want to make vegan keto boba tea and keto vegan gluten free pasta.

    I’ve made this several times. It’s a lot of time/work, but totally worth it! It makes a lot and stays moist for a week in the fridge covered up. I do have to bake it much longer than suggested, maybe almost twice as long. This is one of my favorite things. If I didn’t know it was vegan/grain and sugar free…I’d still be blown away!

    Not one bad or even decent recipe, they’re all fantastic! This channel is a goldmine. I heard about this recently; but maybe experiment with oat fibre, it could open up an even wider branch of recipes.

    im a 6ft 155 lb vegan that eats corn, beans, oats, pasta, and root veg every day. my ma is type 1 diabetic and her doc suggested gluten free eating. i am actually excited to try my hand at GF baking! thanks for this!

    I love your videos. Thankyou so much. I just want people to know that erythritol can cause very severe digestion problems. I know this because it does so for me. Companies used to have to put a disclaimer regarding this on their packaging but somehow they have managed - I guess - to eliminate this requirement. Now it is all over the place and things that sound like they are stevia for instance actually oftren have erythritol in them. I found this out when my favorite stevia soda, added erythritol to it and I got quite sick from it. Even rhings like monk fruit are actually more erythritol than monk fruit now.There can be people eating this who have no idea that their intestinal problems are caused by the erythritol that has been added. I make everything with real Stevia and it woks just fine.

      You're quite right Kathleen, the one I use regularly (Truvia) does give the impression that it's Stevia-based. I learned from the viewers that it wasn't the case. But I don't seem to have digestive issues with it so it's currently the sweetener of my choice. I think when it comes to keto sweeteners moderation is the best policy.

    Looks so good!!! The tip about not doubling the recipe is in general a very good tip when it comes to baking, cause baking is like science almost. Some recipes might handle it whilst other might not. Good work! Thank you!!! 😊

    So happy to find your channel for vegan keto!! I have been vegan for many years, and since last year turning to keto that feels so healthy! But i felt so limited!     I really love the fresh ginger on top. I never would have thought to do that. I usually put crystallized ginger in my carrot cake, but that wouldn't work with keto because it has sugar in it.

    Thanks so much for this delicious recipe! ❤ Even though I didn't have all ingredients (I was missing coconut flour, desiccated coconut, enough coconut cream and vanilla 😅), I still managed to bake this cake and it tasted great. Next time I'll try also with the missing ingredients. 🌷

    The cake looks good and the ingredients ensure it is also delicious.
    Tip for the coconut cream-
    Open the cold tin can at the bottom and then all the water will pour out and only the solid cream will remain in the tin.

    4 tbsp brown ground flaxseed and one cup of water did not get gel like at all. I added more ground flaxseed. I also think warm water will make it gel-like as opposed to cold water

    I usually tap the bottom of the cake tin, and if it sounds kind of hollow, then the cake is usually done.

    Can you share more vegan cake recipe? I'm on keto and I still miss having cakes.. There is really not many keto eggless cake recipe I can find online since it is not easy to substitute egg.. Some could go too dense... Your recipe is always my no.1 or should say the only one.. Almost all came out perfectly.. ❤️ Tq so much

    Thoroughly enjoy all your recipe vids, I can’t help laughing and smiling along at how you enjoy making and tasting . I’m a newbie , managed the Spring onion pancakes without Xantham gum ( as hadn’t arrived in post yet) , but they weren’t too far off yours and tasted delicious . Today is Celeriac and Broccoli mash day , then this gorgeous looking cake and the Cauliflower fritters tomorrow .
    You have a great voice to listen to ,perfect to teach yoga, you would have me snoring at end of class for sure ( I mean as a compliment )😊
