      Just made a pasta dough with 250g flour / 3 eggs as it was the guideline on the video i saw. But the dough is too soft😂 100g per 1 egg would do the work.

    Great video! My grandma has been gone now for over 10 years and I have good memories of helping her cook. We never did raviolis together as she had more polish influence (we would crank out pirogi by the hundreds for the holidays). Miss her alot!
    My 13 year old daughter and I are going to take this recipe on as a father/daughter project next week. She loves ravioli and loves to cook so this looks like a fun way to throw some flour all over the kitchen as a tribute to our grandma's! Can't wait!

    Finally 😂 I made a small batch that "I could eat". 1st batch was a bust but yesterday I was out of store bought noodles and was determined to make enough for lunch. Wow. Taste better than store bought and I was so amazed at myself for going all in on getting a little fancy with my new joy. Thank you so much

      I would recommend using 60 grams of warm water to 100 grams of Semolina Flour this will produce a dough that has 60% hydration. The dough will be firm when first kneading but will become more pliable as you knead and after resting for at least 30 minutes before forming the Cavatelli. The kitchen since early childhood has been a real comfort zone for me. Ive got some really fantastic recipes and notes on all kinds of bread etc. Got a chicago deep dish pizza dough recipe wjich includes riced potatoes thats unbelieveable.     What a beautiful video, showing clearly the technique needed for making and using the dough. Just a quick correction @3:54: 1/16 inch is not 1.58cm but 1.58mm (or 0.158cm).

    I’ve never made pasta from scratch before and know nothing about it, but if I wanted to make carbonara with this pasta, how long should I boil before adding in to the sauce?
    I usually take out the dried pasta when it’s al dente, but I think it’s difficult to tell when the pasta is fresh like this one.
    I’m sorry if my English isn’t perfect.

      Hello @MayMay-hh9ez It is nice to meet you. Fresh pasta only needs a couple of minutes to boil and cook. I would start checking after the first minute if you are planning on finishing the pasta in a sauce that is cooked. Cooking it a little longer for a sauce like Carbonara.     I made pasta today. It took a while but made enough to where I have some for a while. It was marvelous!
    My recipe:
    300 gm 00 Caputo flour
    2 eggs and 3 egg yolks then enough water to come to 190 gm of liquid
    1 tsp salt
    1 tbsp oil oil
    I had needed for 30 minutes then let the pasta rest for 30 minutes then I spent and hour (after I divided it into 4 pieces) running it through the pasta machine then put it in the freezer. Left out enough to make a bowl of buttered pasta and it was just fabulous after a 4 minute rolling boil.

    I just put all the ingredients in a bowl and mix it up and it comes out the same. These people do the same thing when no one is around to film a cool video. I watched for the rolling technique. Homemade pasta is easy and wonderful to taste. Thanks for video.

      Hello Ionatan, It is nice to meet you. This recipe for pasta dough doesn't use any extra fat in the form of oil. The eggs provide what is needed to form the flour into a rich dough.
