    INGREDIENTS:
    For the Pasta:
    10.6 oz dry (300 g) pasta (gluten-free if needed)
    For the Sauce:
    1 Tbsp olive oil
    1 small/medium onion color of choice
    2 cloves of garlic minced or crushed
    1 heaped 1/2 cup (50 g) sun dried tomatoes
    1 cup (240 g) hummus (store-bought or homemade)
    2 Tbsp fresh lemon juice
    1 cup (240 ml) pasta water reserved before draining the pasta
    1 cup fresh (30 g) baby spinach
    1/2 cup fresh (10 g) basil chopped
    Salt, black pepper, chili powder, and cumin to taste

    Perfect timing. I had some beautiful pasta salad in was gonna throw out. Now I’m happily munching on it with the addition oh hummus. It’s delicious!

    I am not sure if you can get that brand of gluten free pasta in Germany but it’s a great pasta that taste good and keeps its shape. The brand is Rumo and is made in Italy.

    As an Italian, I suffered seeing the noodles break so easily. 💔 What kind of past did you use? 😢The sauce is interesting. I am going to try it, thanks!

      It looked like some gluten free corn-rice or corn pasta. It breaks no matter what 😢

      Hi Sandra, sadly I used gluten-free corn pasta, that's why the noodles fell apart so badily. 😢 I didn't have the time and energy to reshoot the recipe as I was 9 months pregnant when I filmed it. It's for sure tricky to work with gluten-free pasta and I am not going to use corn pasta ever again, lol.

      Correct, I used corn pasta. I was so sad when I saw the result but really couldn't film it again as I was 9 month pregnant while shooting the video and went into labor shortly after. I might reshoot it in the future but really don't have the time right now, as my baby needs my full attention. 💛
