Refika thank you so much for this recipe! I used to always get hummus back in the city, but because of COVID and financial instability, I had to move back to the province. We don't have any restaurants here serving hummus. I made this today and it seriously took me back to my days in the city.
I have been working with your recipe and find it to be perfect every single time! Depending on who comes over, I add more or less garlic and paprika before serving. Made it today with my granddaughter and she ate it along with the chicken (she literally dipped the chicken into the hummus). Just made this (in UK, hottest day of the year so far) - absolutely delicious! And now, with the skins removed, I understand why my previous attempts to make hummus turned out more like a falafel mix! The ice cube idea is great: I found I needed to add a couple more, and little drizzles of water to reach the “loose” texture I wanted.
It is difficult to get good Tahini in the middle of the U.S. so I've ordered some sesame seeds to make my own. Thank you for the technique to remove the skins! Edited to add: This was the first video of yours I've watched. I subscribed and immediately found your tahini video. Perfect.

@Edna Turner yes it is true, but not only arabs and greeks, also armenians, caucasians . Turkish cousine is a well mixture of many cultures. Wheat, meat, spices, vegetables, olive oil, meze,deserts. But we are weak about sea food.

Wow!!! That skinning technique is like magic!!! Just like when I found out how to skin garlic effortlessly. Put the garlic cloves in two bowls (making a circle/globe) and shake for 10-15 seconds. Open the bowls and BAM!!!! Skinless cloves! I can't tell you how many of thousands of cloves I peeled by hand (and knife) in my past chef career. If I only knew this secret back then. The chick pea skinning goes right up there with the garlic clove!

Best step-by-step I've seen. Never thought of using ice to keep it cool, always ended up stopping short of really smooth exactly because it was getting warm. And yep, taking the skins off the chickpeas isn't just being picky, they do add a bitter after-taste.

Been making hummus for years, but never soaked them to get the shells off. I tried it today and it was a great tip…..so smooth and creamy. I added roasted red peppers and roasted garlic, my kids love the sweetness of the roasted peppers. Great recipes. ❤️❤️❤️from 🇺🇸

Ok. Absolute game changing hummus right here. I made it in my vitamix to cut down on time and not have to peel the garlic and it is just so fluffy and incredible. I made it only 5 minutes ago and have to make several more batches now since everyone ate it all!!

Genuinely the best homemade hummus ever. I've now done it 4 times and it doesn't fail. The longest time is spent taking the chickpea skins off. After that, a cinch and SO yummy!

I made this the other day and for. someone who hardly ever does cooking, this was a breeze and the results were mwuah perfect! All my family loved it and quite a few who lived in Saudi Arabia for 20 years said it was the best hummus they've ever tasted! It was served with warm Turkish bread :) I'll be making this again for sure!

I love Turkish food and Hummus and it's not easy to find good Hummus. The way you have made it just by looking it started making my mouth watering. I make myself some time but yours look so delicious. It's not only the Turkish food but every thing about Turkey is so good. I visited Turkey long long time ago and loved it. It is not only mine but this is one of the top destination in the world to visit. It is like whole package deal. The great architecture, Historical monuments, rich culture and on the top of all this great people. Love Turkey.

As someone from a Lebanese family, I'm so glad that this was made the way my mum makes it. Simple, but effective. No random ingredients like vinegar or cumin making it taste wildly different. This is the way people. Enjoy.

THIS is the version I still make two years down the line.
I ate in a restaurant in Istanbul, very near to the Basilica Cistern, that made one of the most amazing hummus I have ever eaten. They said their secret was browned butter instead of (or complimentary to) the olive oil.

Refika thank you so much for this recipe! I used to always get hummus back in the city, but because of COVID and financial instability, I had to move back to the province. We don't have any restaurants here serving hummus. I made this today and it seriously took me back to my days in the city.

Just made this (in UK, hottest day of the year so far) - absolutely delicious! And now, with the skins removed, I understand why my previous attempts to make hummus turned out more like a falafel mix! The ice cube idea is great: I found I needed to add a couple more, and little drizzles of water to reach the “loose” texture I wanted.

Believe it or not, peanut butter is a great substitute. You can use just about anything, but the plain, natural type is closest to tahini.

Hummus came to Turkey from Syria many many decades ago. It's cultural and geophraphyical junction here. Traditions, foods, deserts. Same people living in the southern part of Turkey. So kitchen is common❤
@Edna Turner yes it is true, but not only arabs and greeks, also armenians, caucasians . Turkish cousine is a well mixture of many cultures. Wheat, meat, spices, vegetables, olive oil, meze,deserts. But we are weak about sea food.

My daughter and I love hummus and the Turkish place we use to get it made some changes in the kitchen. Mama stopped working. The hummus was never the same. We've tried to do it ourselves and it was decent but never smooth enough. Now we know what to do. Can't wait to try.

Wow!!! That skinning technique is like magic!!! Just like when I found out how to skin garlic effortlessly. Put the garlic cloves in two bowls (making a circle/globe) and shake for 10-15 seconds. Open the bowls and BAM!!!! Skinless cloves! I can't tell you how many of thousands of cloves I peeled by hand (and knife) in my past chef career. If I only knew this secret back then. The chick pea skinning goes right up there with the garlic clove!

Best step-by-step I've seen. Never thought of using ice to keep it cool, always ended up stopping short of really smooth exactly because it was getting warm. And yep, taking the skins off the chickpeas isn't just being picky, they do add a bitter after-taste.

Been making hummus for years, but never soaked them to get the shells off. I tried it today and it was a great tip…..so smooth and creamy. I added roasted red peppers and roasted garlic, my kids love the sweetness of the roasted peppers. Great recipes. ❤️❤️❤️from 🇺🇸

Ok. Absolute game changing hummus right here. I made it in my vitamix to cut down on time and not have to peel the garlic and it is just so fluffy and incredible. I made it only 5 minutes ago and have to make several more batches now since everyone ate it all!!

Genuinely the best homemade hummus ever. I've now done it 4 times and it doesn't fail. The longest time is spent taking the chickpea skins off. After that, a cinch and SO yummy!

I made this the other day and for. someone who hardly ever does cooking, this was a breeze and the results were mwuah perfect! All my family loved it and quite a few who lived in Saudi Arabia for 20 years said it was the best hummus they've ever tasted! It was served with warm Turkish bread :)
