Love the result! Does the table have a veneer top? I want to do this to my table, but I’m worried the veneer won’t sand or stain well.

As long as you don't sand down too far in the veneer it'll stain fine!

how do you clean out your sprayer when your using oil based top coat?

Dump the excess, wipe it with a paper towel until the majority is gone. Then fill with some mineral spirits and spray that through to clean the inside of the gun. Then wash w hot water and soap, take all apart!! Has worked so far!
