I just smoked a 5 lbs Prime Ribeye Tomahawk on Wednesday; I wish I could share some pictures and taste. I did a reverse sear with my grill grate after 2 1/2 hours smoking at 225.

In South Africa we use marinating sauce for steaks - leave it overnight under marinating sauce - then put on the grill.
I have done that in the past. Thanks for the reminder. I will show doing one like that very soon.

Pulling at 130 would easily rest into the 40's pushing past medium in the center id pull it around 100-110 to rest into a true medium rare.. At the steak house my tommys will usulay cook 20 to 30 more degrees after cooking so i tend to pull mid rare at 90 degrees and medium at 110. There is a lot of ambient heat in the resturant.

When I purchase my tomahawk steak, I always purchased it from Sam’s Club but I never grilled it. I always put it in the oven. Thanks for the idea.
I understand why you patted it dry to help with browning. Is there a reason you didn't add oil to the meat after? Does it have to do with the thickness and cooking time? I assume you didn't use the pepper because it tends to burn on the grill with long cooking. Thin quick steak would probably be ok to use pepper if you don't want burnt pepper. Yes?

what is the reason for pulling out the moister before cooking?
I think he forgot to follow up that the salt then is dissolved in that moisture which then gets reabsorbed back into the steak. That's how the steak gets seasoned beyond the top layer when both get absorbed. I also don't think he noted that it's large kosher salt he's seasoning it with. Table salt doesn't work as well and is way too strong for seasoning meat like that. It's why many chefs will use large Kosher salt crystals for seasoning meat. It does the job better, covers more area, and keeps the flavor without being as strong as table salt. As far as patting any extra moisture left on top before cooking helps browning. Hope that helps.
Besides salt what other seasoning would you recommend
Salt and Pepper. I didn't use pepper because it get so dark. You can use your favorite steak seasoning as well.

If you want the steak to be medium what temperature should it be before you take it off the grill?
Take it off at 145 degrees F for medium. Let it rest and rise to 145 F

AB, as gorgeous as that steak was, I got tired of paying for a bone that is sort of useless except for show. Now I stick to ribeyes. But I love your method.
I hear you but it's not something that you do every weekend it's more of a special occasion thing that can also be shared with more than two people. Three at most
@chrisbullock6477 I am not the kind of person who would buy one steak and ask people to share. I buy three at a time. If I was married I would share with my husband but that is not the case. We do it once or twice a month during grilling weather. That's why I stick to a great rib eye and not pay for the bone that you just throw away. There is so much you can do with what's left when your done.
