    Can a different starch (like potato or possibly arrowroot) be substituted for the corn starch to achieve the same crispness? (Reason: corn allergy)

      The corn starch is optional anyway, I have a friend who makes similar sweet potato fries in her convection oven, they are crispy enough and she doesn't use any corn starch. She just puts the fries on a rack over a sheet tray so that the air can circulate all around them. I m sure her recipe would work just as well in an air fryer. Corn starch helps the oil stick by drying to surface out, if you don't use it, just pat the cut fries dry with a paper towel before adding the oil and spices. Hope that helps.
      Of course, you could always try the other starch options to see if they work for you.

      Yes, you can use potato starch instead of corn starch. They can be used interchangeably for this recipe, but you can always experiment with the exact amount to get a level of crispiness you like. And as Allazander said, the starch is optional... we often make sweet potato fries without adding any corn starch and they end up crispy (as long as we don't overcrowd the air fryer).

    1/8 tsps of pepper - common. Thank you for the recipe. Gonna try it. But not measuring the spices like like its rocket science.

      Thanks for your comment! Yeah, you definitely don't have to measure precisely if you know your preference... but keep in mind that some people prefer having exact measurements. If we had said "pepper to taste" or "a pinch of pepper", we would have received comments saying "How much is that? That's not specific enough". Just trying to make our videos useful for as many as possible. Let us know how you like the recipe :)

    Frustrating as sweet potatoes were white inside. I think this requires yams.

      You didn’t buy the right type of sweet potatoes. Probably Japanese sweet potatoes or something else, just try again.

      You just got the wrong ones. Sweet potatoes come in multiple varieties, the orange ones are more common and higher in Vit A/other nutrients than the white. White sweet potatoes are more likely to crumble and are dryer. White sweet potatoes would not be a good choice for this recipe as they'll likely fall apart once cooked while orange sweet potatoes are perfect for it. Orange sweet potatoes are not the same as yams.
