  • Seriously Crispy Sweet Potato Fries. Baked Sweet Potato Fries Vs Fried Sweet Potato Fries. In this new series, together we create two different methods from the same ingredient, Baked Vs Fried. These Sweet Potato recipes are both fantastic, full of flavour and have the most amazing crispy crunch. Learn how to make these two delicious fries and impress yourself and your family. Which one do you prefer? You be the judge.
    Each recipe serves 2
    Ingredients -
    Baked Sweet Potato Fries -
    2 - Large Sweet Potatoes
    4 tsp (10g) - Cornstarch
    2 Tbsp - Vegetable Oil
    Cold Water
    1 Tbsp - Sea Salt Flakes
    Seasoning to taste
    Fried Sweet Potato Fries -
    2 - Large Sweet Potatoes
    4 tsp (10g) - Cornstarch
    2 Tbsp (30ml) - Water
    1 Tbsp - Sea Salt Flakes
    2 Tbsp (30ml) - White Vinegar
    1 Litre - Vegetable/Canola/Sunflower Oil (Enough to fill your pot halfway)
    Seasoning to taste
    Serve with a condiment of your choice

    I made the baked version today. Couple of things that I think everyone should know. Baking takes a LONG TIME. I know it doesn’t seem like it in the video, but between soaking, drying, baking, flipping, baking, and crisping, it is a 2 hour process. Plan accordingly.
    These need to be peeled. The skin will burn in the oven if you don’t.
    Rather than leave the oven completely open to crisp, I would crack it open and keep an eye. I found that my fries were getting cold after the 10 min crisping period.
    Other than that, the ones that came out well were the best fries I’ve done in the oven. Good recipe.

    I love how you describe everything, I'm 65 a retired cook but I enjoy your recipes. I always cook for two so your way of cooking makes it easy I used to have a problem making smaller dishes.

      It’s a different type of starch. We remove any natural starch which will prevent them from being soggy and replace it with a starch (corn or potato) which will get them crispy. 👌

      I’m glad you enjoyed it! The reason being is to allow any excess moisture to drain. Letting them cool and dry will allow them to crisp more! 👌

    Southern twist is sprinkle with mixture of salt, brown sugar and cinnamon after frying. Then mix a pinch cayenne with honey mustard for a dip. Addicting

    So Chef..this is something I do not get..you soak the sweet potatoes to remove the starch (in order to get crispy) and then you add starch (in order to get crispy).
    How does this work?

      The natural starch in sweet potatoes contain pectin, we remove that and add a new starch that will crisp. The natural starch will steam the potatoes and not get them crisp. With the fried version. The vinegar slows the breakdown of pectin allowing them too crisp, without the natural sugars burning. If we were to fry them without adding the cornstarch, the potatoes will become soggy. There’s a bit of science involved in the recipe.

    I just use an oil strainer from Amazon for $5 USD, And into an Empty Clean Apple Juice Container . The strainer is meant for used oil and catches any burnt or excess particles. For $5 it makes the process of Saving Oil Sooooo Easy 😁.
    Btw, my potato slices are cooling and just about to go into my cornstarch slurry. Thanks very much for your video. Hopefully it turns out ok !😁

    I do hate the flipping part whenever I bake something,
    which is why I use a net like tray so they cook on both sides at the same time.

      Unfortunately not sorry. You need the corn flour or potato starch to get the crunch, without these you won’t get a crispy skin.

    Heyyyy. Ok so if I want to add paprika to my fries (fried) do I add it after frying them or with the wet corn starch mixture?

      You can make a little paprika salt mix to add to the fries once they’ve been cooked 👌👌

    Yesterday I baked sweet potato!! I craved fried one but worried calories.. It was nice but some were bit bitter maybe I overcooked☹️ So im gonna make again following this recipe!! Now my new question is which one would be my snack between baked potato and baked sweet potato 😋

      I'm very sorry for the late reply! The natural sugars (Pectin) that's in sweet potato do burn very quickly and definitely taste bitter, unfortunately. The fried version is amazing but obviously not as healthy as the baked. You should 100% give this recipe a go, be it baked or fried they are both delicious. Thank you for watching!

    Hi Chef, I'm making the fried version as I write this. I purchased expeller Sunflower oil, but what about Avocado or Coconut oil for deep frying?

      Hey Marc. Avocado oil has a really high point, meaning it can be heated to a very high temperature (260c-500f). If you do deep fry in avocado oil, it will let off a nutty flavour, which will be passed onto anything you deep fry in it. Coconut oil is also good, around 90% of the fatty acids in coconut oil are saturated, making it resistant to heat. Please enjoy the fries, they are so good!

      I use light refined olive oil...takes the heat better than extra virgin and not as much of the olive taste!

    How do you remember the little tips like add white vinegar to sweet potato for thst reason, do you have notes or just remember naturally after being a chef so long?
    Whats your thoughts on induction hobs? Ive alwags used gas hobs but looking to build a house and unsure for the future

      Hey Dan. Yeah it’s just a muscle memory sort of thing like riding a bike, especially after doing it for so long. I do have to refresh my memory on certain things every now and again but it comes back in an instant.
      Personally I rarely use induction unless I really need to but that just my preference. They do heat up a lot faster but can be uneven in temperature distribution. Gas is also a lot cheaper than electricity.

    Would it be good placing the chips on a wire rack to avoid them sticking when cooking, would it make much difference?

      It wont make too much difference but will allow better airflow around the fries. The baking paper (parchment paper) will prevent them from sticking. If you wanted to do it this way, I'd recommend putting the parchment paper on the wire rack. Let me know how you go.

      Unfortunately cornstarch or cornflour is needed in this recipe. It’s what gives the sweet potato it’s crispness. Anything else will cause the potatoes to become soggy and burn.

      Great question! Unfortunately its high levels of polyunsaturated fatty acids make it unsuitable for high-heat cooking, such as frying.

    Can I use the oil again for any deep frying? I think what I am asking is, will the flavour from the sweet potatoes be in the oil?

      Hey Steven! It won’t taste heavily of sweet potato but may have a slight smell of them. It will still be fine to use to deep fry anything else 😊

      I’m sorry for the late reply, I wish I had seen this earlier. It’s fine to replace the cornstarch with corn flour, they are very similar in what they do. I hope you enjoyed them! 😊
