꾸덕꾸덕한 브라우니를 쌓아 케이크를 만들었어요~
윗면에 파사삭한 크러스트가 제대로 생긴 진한 브라우니를 구워 사각형으로 잘라 가나슈를 뿌려 쌓고 위에는 남는 브라우니를 작게 잘라 올렸는데
정말 초코초코하고 더티 초콜릿 스타일의 진한 초콜릿 케이크가 된 것 같아요~
저는 실온에서 충분히 식힌 뒤 만들었는데 냉장실에서 차갑게 식혀 만들면 더 꾸덕한 느낌이 난답니다~
별다른 장식 없이도 브라우니 만으로도 묵직한 느낌이 나더라구요~
정말 진하고 단 만큼 한입 만으로도 당 충전이 제대로 되는 것 같아요~

▶틀 사이즈 Mold size : 23cm
▶재료
다크 커버춰 초콜릿 300g
무염버터 180g
달걀 180g
갈색설탕 230g
소금 3g
바닐라익스트랙 3g
박력분 60g
코코아파우더 35g
가나슈 (다크 커버춰 초콜릿 30g + 생크림 20g)
▶레시피
1. 다크 커버춰 초콜릿과 무염버터를 중탕으로 녹인다.
2. 뜨거운 물이 담긴 냄비 위에 달걀이 담긴 볼을 올리고 갈색설탕, 소금, 바닐라익스트랙을 넣고 설탕이 녹을 때까지 저으며 섞는다.
3. 냄비에서 볼을 내려 핸드믹서로 풍성한 거품이 올라올 때까지 휘핑한 뒤 녹인 초콜릿 혼합물을 넣고 섞는다.
4. 박력분, 코코아파우더를 체 쳐 넣고 섞은 뒤 틀에 붓고 평평하게 해 165도 예열한 오븐에서 25분 정도 굽고 식힌다.
5. 브라우니의 가장자리를 잘라내고 4등분 하고 자른 테두리 부분을 작은 큐브 모양으로 자른다.
6. 사각형으로 자른 브라우니 위에 가나슈를 뿌리고 다른 브라우니를 올리고 가나슈를 뿌린 뒤 작게 자른 브라우니를 올려 마무리한다.

300g Dark couverture chocolate
180g Unsalted butter
180g Egg
230g Brown sugar
3g Salt
3g Vanilla extract
60g Cake flour
35g Cocoa powder
Ganache (30g dark couverture chocolate + 20g whipping cream)

Hi, thank you for this recipe! I just did it this morning, it was really tasty; although I could have never ate it all if I did such big pieces of brownies ahah, so I'd advise cutting smaller pieces than the ones shown on the video. My brownie was a bit undercooked at some place, so I'll be careful about that next time. Adding nuts might be a nice touch, as well as switching the chocolate ganache with a raspberry or strawberry coulis (to tone down the strong chocolate taste, but if that's what you're going for, then keep the chocolate ganache). yooooo i made this cake and its soo fudgy !! and huge tho if u wanna eat that entire thing by yourself i would recommend using the half of all the ingredients. also after i took the cake out of the oven, i immediately put it in the freezer for 2 hours. its so rich in chocolate i love it.
