돌돌말린 모양이 귀여운 시나몬 롤빵을 만들었어요~
윗면은 살짝 바삭하고 돌돌 말린 속은 설탕이 녹아 촉촉하고 쫄깃한 식감도 나서 정말 맛있더라구요~
일반적으로는 발효한 반죽에 버터를 먼저 바르고 시나몬과 설탕을 섞은 것을 뿌리는데 가루가 많이 옆으로 흩어질 수 있어
버터에 설탕과 시나몬 파우더를 섞어 잼 처럼 발랐는데 훨씬 깔끔하게 작업할 수 있어 좋더라구요~
저는 깨끗한 실을 이용해 반죽을 분할 했는데 칼로 자르는 것 보다 깔끔한 모양을 낼 수 있어 좋답니다~
구운 빵에 글레이즈나 크림치즈 프로스팅을 발라 많이 먹는데 저는 크림치즈 프로스팅을 곁들여 봤어요~
틀에 반죽을 팬닝할 때 간격이 너무 좁거나 반죽이 두꺼우면 구웠을 때 가운데 부분이 많이 튀어나올 수 있답니다~
손으로 돌돌 풀어가며 먹으니 재미있는 것 같아요~^^

▶틀 사이즈 Mold size : 22cm
▶재료
따뜻한 우유 130g
드라이 이스트 4g
강력분 300g
설탕 20g
소금 5g
달걀 1개
녹인 무염버터 45g
무염버터 50g
갈색설탕 70g
시나몬 파우더 4g
크림치즈 프로스팅 (크림치즈 100g + 슈가파우더 20g + 바닐라익스트랙 3g + 레몬즙 5g + 우유 20g)
▶레시피
1. 따뜻한 우유에 드라이 이스트를 넣고 섞는다.
2. 제빵기에 강력분, 설탕, 소금, 달걀, 녹인 무염버터 우유 혼합물을 넣고 매끄러워질 때까지 20분 정도 반죽한다.
3. 모양을 동그랗게 만들어 볼에 넣고 랩을 씌운 뒤 50도 정도의 뜨거운 물이 담긴 볼에 반죽이 담긴 볼을 올려 약 40분 정도 발효 한다.
4. 발효된 반죽의 가스를 빼고 약 40cm x 35cm 정도로 넓게 밀어 편 뒤 무염버터, 갈색설탕, 시나몬 파우더를 섞어 반죽에 바른다.
5. 끝에 부터 돌돌말고 실을 이용해 약 3cm 정도로 12개로 자른다.
6. 버터를 바른 오븐 팬에 팬닝하고 랩을 덮어 2배로 부풀 떄까지 약 40~50분 정도 발효한다.
7. 180도 예열한 오븐에서 20분 정도 굽는다.

130g Warm milk
4g Dry yeast
300g Bread flour
20g Sugar
5g Salt
1 Egg
45g Melted unsalted butter
50g Unsalted butter
70g Brown sugar
4g Cinnamon powder
Cream cheese Frosting (100g Cream cheese + 20g Powdered sugar + 3g Vanilla extract + 5g Lemon juice + 20g Milk)

I made them last week and they were perfect! The taste of butter in the batter is amazing and the filling is not overwhelming. Maybe next time I will add a little bit more cinammon but the sugar and butter are just right. I made them in a 20cm pan and it worked fine. Also I hand-kneeded because I don't have a machine. I used a flat wooden spoon (if that makes sense) and after about 10-15 minutes it was smooth and soft like the one in the video. Another perfect recipe from Cooking tree!
THIS IS SO GOOD I CANT BELIEVE IT 😫 Finished baking them like 20 minutes ago and now im in my own little heaven! They are not too sweet, just the right amount AND HELLA SOFT INSIDE! Its like im eating a little crispy cloud. Definitely gonna bake them again, its so easy yet so tasty! Thank you for the recipe 💌

I love the idea of speeding the rising of the dough by putting in a larger bowl of warm water. I would normally let it rise on top of the cooker with the oven on, but that seemed always so wasteful. Thank you for the new method.

you can just put it in the sink too and fill that up with warm water. that's what we've always done. the larger bowl isn't necessary :D
@@8Joya8 it does work. i don't know how people aren't familiar with this technique. i've been taught to do it like that from the start. that might be because i'm finnish though, i guess it's kind of a thing here.

Amazing recipe! Things I would change: Add just a bit more filling and add pecan nuts, they're delicious with the brown sugar and cinnamon! Also, I would add a bit more cream cheese frosting because of... reasons :D

I made these except instead of cinnamon sugar I made a strawberry cheesecake version. They were also delicious! I had people telling me these were the best that they have had and I agree this dough recipe was delicious it was so fluffy and pulled apart so easily.
