I made this for Thanksgiving and substituted strawberries for the blueberries and it was a hit!!! I called it strawberry lemonade cake. I only cook deserts on Thanksgiving and Christmas and receive many delicious comments. I knew it was going to be a hit after tasting the batter....ooooweee LOL
As I was watching the video I was thinking bout doing half blueberries 🫐 and half strawberries 🍓

A tip: Roll your blueberries in some flour before folding in batter, and the blueberries will not sink to the bottom of the cake while baking :)
Most of them didn't . You can actually get away with it in this recipe.

How long is your mixing process with creaming butter and sugar? Love the cake I will be trying it.
On medium speed for 3 or 4 minutes. Scrape down the bowl to make sure the butter and sugar are well blended.
can i also make this in loaf pans?

I put some fresh blueberries in the freezer. Would you thaw them or fold right in there frozen?

Mmmm, mmm, looks guuuud ;-) How long do you allow the batter to rest before you put it into the oven?
There's no batter resting. Mix it, put it in the pan and bake.

This was great. Taste better overnight. But if I cut this recipe to 2 cups will it be okay or would I have to adjust with the other ingredients? Like your banana Bread recipe, instead of 1 cup I add 33% less sugar and still comes out enjoyable.
ADNERB 2 cups of sugar? If you cut the sugar in the banana bread then you like things less sweet. The cake will be fine for you.

When I think of soul cream, I always think of chips. What does it do to the cake because I've heard of other people using it too while baking? I wanna try it so bad but I'm nervous I'll do it wrong.
It adds moisture. You can do it just follow the recipe and you'll be fine. This cake is easy...pound cakes are a good place to start baking.

Do I have to keep this in the refrigerator?
Not really. I keep it in an airtight container in a cool dry place such as my dining room table. But if it’s not going to be eaten within 3-5 days yeah pop it in the fridge until you’re ready to serve it. Just take it out a few hours before so it can come down to room temperature.
