Hope that helps! You basically want to increase the temp by about 15C or 20F so if I bake mine at 160C you would bake yours at 175C (without a fan) :)

Authentic New York cheese cake doesn’t have flour, it has corn starch. I am a baker and have this recipe with corn starch. Try corn starch next time and use a water bath. You will get better results 😍
I made this cheesecake last week, the texture and taste was melting , it was melting in the mouth. Just one of the sides of the top layer got a little browning
I love your recipes. Just want to find out. All your cakes when you add the flour you ask to use a spatula. When i do that the flour is in lumps here and there. Tried mixing but it still reminds so no choice I just use the hand mixer abit. Maybe thats why the cake is not fluffy. Can you advise. Thanks

Sharing my recipe with you. 1 1/2 lb cream cheese, 1/2 lb sugar, 1oz corn starch, 2 eggs, 4 egg yolks, 3 oz sour cream, 2 tsp vanilla extract and lemon zest. Bake @ 350 in water bath for about 1 hour.

Hi, in your butter cream recipie 1cup 230g butter and 2cups 260g icing suger . So are you using 2 different size of cups to measure ingredients???
Different ingredients have different weights when using it in cups that is why it is better to use a weighing scale to get the perfect consistency

Great question! It helps with binding the bicuits together when baked and also helps with keeping the crust firm :)
