I recently made a cheesecake and experimented with temperature. I cooked it low and slow at 300* and the texture was like mousse. It rose high and didn’t fall at all. It was pretty amazing.
For sure! Baking it with low temperature really helps. I baked with a higher temperature at the beginning because I like a golden caramelization on top but you can also start baking it with 310F if you don't care for the color. (Bake longer in that case!)

Wow! This is the BEST cheesecake recipe. I love it SO much! I have also tried your lemon pound cake and it was perfect also. Literally better then juniors cheesecake too, because you get it fresh, right at home! I followed every step to the letter and turned out perfect. Its in the oven now, but the batter, just wow. I have a 60 year old electric stove and to say it has quarks is an understatement. I'm about to try and bake this and hopefully the oven keeps the temperature right!!
I can't wait to try this recipe. I lived in Mexico for a few years. They made this banana pie with a MARIAS cookie crust. The crust was absolutely delicious.😍 (Here, in the USA, you can usually find MARIAS in the snack aisle at the grocery store or in the Hispanic or International food aisles.) Definitely give MARIAS (as a crust/shell) a try- esp with anything lemony! 🍋🍋🍋
This looks very smooth and delish. Your top doesn’t crack like mine …it’s the water bath I think that creates the steam to gently keep the air moist . I am going to try this 😊. Fresh berries at this time of year makes a delicious topping . Can you suggest another topping when we don’t have ripe sweet fresh fruits like in winter? Your instructions are very clear and good tips like wrapping the foil at the base so as to not let the water in on the spring form pan. I'm glad you enjoyed the video! About your question; Can you get any fruit or frozen berries at stores? - I personally like whipped cream or fruit sauce (especially berry ones) with cheesecake. It should work fine with frozen fruits, if you can't find fresh ones. I also shared how to make caramel sauce in the past, check that out if you love caramel😉

@PastryLivingwithAya Great recipe, but I would politely disagree; the Sour Cream and Eggs should be Room Temperature, to aid in avoiding any chance of cracking. Also, it's best to add eggs one at a time. Have a nice day.

Thank you for giving it a shot! Was the foil wet inside? There is a chance water may went in from a small tear. If it was not the case, try baking the crust next time and see if it gets better. It could be due to the type of cream cheese too if it was softer than mine. Just my guess!

I hope you enjoyed it! Where does the heat come from in the oven? My current oven release heat from the top, that might give a darker color. I baked it with a convection setting with a fan. Each oven act differently but I hope you'll find the best setting for yours!

Sour cream could be alternated with drained whole fat plain yogurt or greek yogurt. Drain it over night on a cheese cloth or paper towel (Place a heavy weight on top). I heard heavy cream can be alternate with milk + butter but I can't promise anything since I haven't tried it before!

I haven't tested yet but I would bake the half time and check toward the end. It should giggles slightly like in the video. You can also start baking it from 310 F | 154 C since you might not get much caramelization anyway with the shorter time. I hope it helps!
Tip for people that love cheesecake especially New York cheesecake it is perfect for freezing 🥶 just individually wrapped in plastic wrap and put in the freezer on a tray in a single layer once frozen 🥶 just date and put in a ziplock bag and when you want to have cheesecake get it out the night before and put in the fridge on a plate to thaw in the fridge until you have the next day enjoy 😉 ❤
