Consider MOT-ing it again in the Autumn so that you can hopefully get a full season of camping happiness
Now what are you going to do with the suspension? The MOT list was all under the car. Hopefully some fancy set up. Like your other projects. Lower it a bit, could look sharp. 😊
Fab job! Just something to consider, the top of the roof would be better painted in a light colour to reflect the sun. It might get too hot in strong sunny days with the dark roof.

Is the transit custom a victim of the oil bath cambelt failure problem? Ours has just had an engine on warranty even though it’s 17 years old and out of warranty and we didn’t even buy it from Ford. Hope you get it sorted bud. Best of luck.
Door handles & mirrors are seconds to take off on an early sprinter, shame you didnt spend a little longer doing some sensible removal of badges, handles etc.

You'll need vents if you're planning on heating and cooking with gas in it.
