I am a really good cook. I also enjoy cooking. I am no where near this level of art. Plus, his food looks amazing. I just cooked a fabulous breakfast and watched this while eating. I seem to want some sushi and deep fried fish now. Maybe one day I’ll take some classes on this style of food preparation. Very good instructions in these videos.

I'm seeing a lot of comments about the chefs hands and overall "cleanliness" so I feel I should say that is probably due to excessive water exposure. I'm not a sushi chef by any means but I did work at Starbucks for a few years. We had to wash our hands constantly and used a dish sanitizer that was HELL on the hands and would constantly cause redness and other discoloration in my fingers.
Besides if this is street food, the chef might also be the fisherman so they're around water all the time. I wouldn't be surprised if their hands were stained but they're not necessarily dirty.
