Mermaid Meringue Cookies with White Chocolate Ganache Filling!

⭐ Liquid-gel food coloring
⭐ 3-Color Coupler
⭐ Large decorating bags
⭐ 1M star tip
⭐ Parchment paper
⭐ Baking sheet
⭐ Sugar pearls
⭐ Edible luster dust
⭐ Brush
⭐ Ganache filling
Instructions
1. To make the meringue, combine ½ cup (120 grams) egg whites with ¾ cup (150 grams) sugar.
2. Place the mixture over a pot of simmering water and whisk until the sugar dissolves.
3. Pour the heated mixture into a stand mixer and whip on high speed until soft peaks form.
4. Reduce the speed and add ½ teaspoon (2.5mL) vanilla extract.
5. Increase the speed and whip until stiff peaks form.
6. Pipe the meringue on a parchment-lined baking sheet.
7. Bake the meringue cookies at 185°F (85°C) for 90 minutes to 2 hours, or until the cookies are dry and sound hollow when tapped.
8. To make the ganache filling, heat 1 cup (227 grams) heavy cream.
9. Place 11oz (312 grams) white chocolate chips in a bowl.
10. Pour the warm heavy cream over the white chocolate.
11. Let it sit for a few minutes to allow the white chocolate to soften.
12. Whisk the mixture until smooth.
13. Chill the ganache in the refrigerator until it’s firm.
14. Beat the ganache with an electric mixer until it becomes light and fluffy.

These are CHEAP on Wish too. Some are free & you just pay shipping. You can also put the 3 colors in a tube made of plastic wrap & drop them down in a regular pastry bag too.
I have had a couple of those over the years. They are very convenient when using more than one color
Wilton sells them and not expensive. Walmart or Ebay bay
you can also just fill individual bags and insert all into a larger bag fitted with your tip. I have this "system" from Wilton, but sometimes I just want to whip up multicolor b/c in a hurry...lol

This looks really nice!!! Also when you used different food colourings to produce different colours I was slightly shocked I almost never see that for some reason and totally forgot that it is a legit thing we could do!!! I always worry about which colours I should get haha

Are the meringues crunchy through and through ? Or are they soft in the middle of the crisp ?
I have a batchbin the oven. They are yet to dry. They seem to be almost like marshmallows. Almost 2 hrs. Oven temp is fine. Should i keave them longer? Or increase heat?

I tried your recipe (meringe only not ganache) and i have some questions. About the mixture on the simmering water. How much time should I whisk the mixture? I waited till the sugar to be dissolved and the mixture had a caramel feel. Is that normal; And what about the baking? normal baking or with circulating air? Mine were dry outside and a lil wet and sticky inside ( I think, possibly i should have mixed it more)

I've made meringue cookies before, but never heated the egg whites and sugar to dissolve it. Is it better to do it that way if you are using granulated sugar rather than caster sugar?
pagan22 it’s a Swiss meringue, and since you’re dissolving the sugar you won’t get that grainy texture that you sometimes get from regular meringue :)
