    MERINGUE COOKIE RECIPE
    ・ 3 egg whites (room temperature)
    ・ 200g sugar
    ・ ½ teaspoon vinegar or lemon juice
    ・ 1 teaspoon vanilla extract
    1. Put egg whites and vinegar or lemon juice in the clean, oil free mixing bowl
    2. Whisk on medium speed for 1~2 minute to break down egg white then whisk on high speed until foamy.
    3. Continue whisking and gradually add sugar, about 1 Tbsp at a time
    4. Keep whisking on high speed for 5~6 minute until stiff and glossy(do not over mix the meringue)
    5. Add vanilla extract and whisk briefly
    6. Prepare meringue as shown in the video and bake on 100C/200F preheated oven for 2 hours

    머랭팝과 머랭쿠키인기가 날로 핫 해 지는것 같아요
    가볍게 먹기도 좋고, 선물하기도 좋고, 칼라플하게 만들어서 케익을 장식하면 너무 이쁘죠~ 하지만 머랭을 잘 못 만들면 파이핑 할 때 녹아 내리는 것 같고, 그래서 어려워 하시는 분들이 많은데, 이 영상 보시면서 찬찬히 따라 하시면 실패없이 예쁘고 맛있는 머랭쿠키도 만드실 수 있답니다!
    맛있게 만드신 머랭쿠키는 습기에 약하기 때문에 공기가 들어가지 않도록 플라스틱 박스나 유리병에 보관하셔요. 며칠동안은 바삭한 머랭을 즐기실수 있는데 혹시라도 머랭 안이 끈적하고 눅눅해 졌다면 다시 100도의 오븐에서 15분 정도 말리시면 다시 바삭한 머랭이 됩니다.

    Hi guys, I've noticed there are many questions about the baking time, so I thought I would explain.
    Meringue is not like other "cookies", especially with the coloured ones, we don't want them to get browned. Rather than "baking", it is more like drying them out in low temperature. Also, since the size of the meringue lollipops are quite big compared to the meringue kisses, it takes quite a long time.
    Also, I used paper lollipop sticks, not plastic. Do not use plastic, it will melt in the oven.

    Good evening wonderful video. Am a cameroonian and am a baker. Have got so many inspirations from you. Have been watching your videos for close to six months now .
    I try the meringue cookies it cake out so well. But after some time it became sticky and as I decorate my cake with it it started melting .

    This is such a wonderful video; I tried making these and I found they lost some shape and went slightly brown. I had my oven set on 100 which is the lowest temp it will go, Any advice.

      Hi Julie, thank you. If slightly lost the shape, you can whip longer to make the meringue firmer. And if your meringue gets brown, half way during baking, cover with foil or baking paper. I hope this helps 😘

      Hi Kamalekshana 😊 yes, you can bake it at 110°C. Just keep checking to see if the meringues are done or not. If the top of the meringue starts to brown, but inside it still not done, you can cover the meringue with baking paper. I hope this helps 😘

    Hi, may I know should I set the oven with or without fan? I assumed as without fan, correct?
    Also any specific rack shall I place during baking in oven? Middle / second top / second bottom rack?

      Hi Tim Rachel, you should set the oven with the fan. Fan oven has a more even temperature.

      Acids help the meringue keeping its form. You can use vinegar, lemon juice, cream of tartaror citric acid. I prefer powders

    Hello Deborah , love your vids . So beautiful. My recipe is very similar to yours and I been baking meringue cookies for some time . They all come out perfect however I can never seem to get a range of shapes no matter what pipe tip I use ! However they all come out like kisses and no shape despite the tips . Have you encountered this issue ? Any help be greatly appreciated ! Thanks 😊

      Hola Rosa, Yo uso palitos de piruleta de papel, no plástico. No use plástico, se derretirá en el horno.

    Thanks very much for your tutorial. I do however have a couple of questions. Why is it that some people place the egg whites and sugar in a double boiler before beating up into a meringue? From what I see here, the results are the same... Also, you've filled some piping bags with multiple colours and you've formed sausages wrapping in plastic wrap with multiple colours, and placed them inside piping bags... What's the difference...?

      Hi Anna, whisking on high speed with a mixer will form lots of large air bubbles. The large air bubbles expand more than small air bubbles which makes the meringue crack in the oven. When you whisk, start on medium speed so egg whites form small and even bubbles.
      You can put your oven temperature slightly lower like 90C.
