    i made my meringues by hand. Took me 1 hour. my hand mixer wasnt working so i decided to make them by hand. hand was sore afterwards but it was worth it. they are so yummy!

    Hi everyone.
    Just wanted to give some people a alternative way to make these with liquid food colouring.
    I made these just now, i only have liquid colouring, so what i did is take some of the white mix and then add food colouring to the small amount of mix, and just make it darker than you normally would so that the colour shows up after they bake. Works just as well to get a similar effect of different colours.

      There is another method too, mix the liquid colouring with a little bit of icing sugar, it will turn it into a paste!

    Made the meringues using your method. Except, used lavender extract instead of vanilla and coated them with Nutella. it's come out wodnerfully!! thanks Jemma! ❤😘😁

    All the dislikes are from the egg yokes who couldn’t participate in the meringues process an felt left out 🥺🥺😂🤣😂🤣😂🤣

      I was amazed to find out the egg whites are far higher in protein than the egg yokes. Eggs, the perfect food (if pasture raised organic).

    I was making these for my friend birthday party in school (i am a high schooler) i got some help from my mom and they turned out just perfect but for me instead of putting a secret marshmallow i put secret m&ms just about 4 pieces each it turned out perfect my friends loved it

      I’ve heard about crack in meringues before. Some bakers recommend cooking them, but not removing from the oven. So when they are done, turn oven off, leave the door cracked with a dish towel and let the meringues cool down slowly in the oven.

    If you want to be sure not to get any yolk in your egg whites, then crack the egg out on a plate, use an empty soda bottle to suck up the yolk, place something flat under it (like a frosting spatula) to make sure the yolk doesn't fall out, and move it to another plate or bowl. This way, you're sure to remove all the yolk, it's a lot easier, takes less time, and is even safer since the outside egg shell has a higher chance of containing diseases.

    Maybe crack each egg white into a separate bowl before adding to the mixing bowl. Yes, it's an obvious solution to those of us who know the science of making Meringues, but a simple tip for beginners or those using their parents ingredients because let's face it, we'd soon get fed up with losing a dozen eggs to a recipe that calls for 6. Great video. :)

      You can also crack the eggs when they are cold. Then the egg-yolks will hold better. (If you do it, make sure you let the egg-whites become room-temperature before you whip them. If they still are cold, they won't reach their full "potential"!)

      Yes... Never crack your eggs on the edge of your mixing bowl. Use a separate bowl every time. Ensures no shells, etc

    I made this and it turns out amazing! i just use yellow color on the both side, reduce some sugar, add some of lemon zest, and sprinkled it with my sprinkle. it become cuteeee! someday i'll put it on my pastel-color layer cake for the decoration

    I love making little meringues for the tops of cupcakes. I like to use a star nozzle. when you first started piping them they looked like toothpaste lol

    What Jemma failed to say (but totally should have) is don't crack the eggs straight into the mixing bowl, break them into a bowl or cup so then if you get some yolk in them you won't need to throw away a whole batch of whites

    Just cooked them today. They are really amazing and very testy. I followed all the instructions and they look the same. Only one thing was different - time. It took me 3 hours to dry them. Otherwise it's wonderful tutorial. Thank you very much for such great ideas!

    Am I the only one who can't find colour paste ANYwhere. I've been to shops in Belgium, France and the Netherlands and no luck. Maybe you can do a giveaway? Colour pastes, vanilla extract (yours looks amazing), piping bags,... That would be so fun! X

      De Makro in THE netherlands is were i got most of my baking stuff, including gelcolors from wilton (they have quite a lot of wilton stuff there) not everybody van vet in though you neem to have a pass

    A little tip I know: when making meringues and using a hand whisk, don't allow the hand whisk to touch the bottom of the bowl when whipping the egg whites.

      jish doon you absolutely need a scale because the weight of the sugar is the double of the egg weight. Meringue can be extremely easy if you weight everything precisely!

      You don't need scales for meringues. Simply use three egg whites to a standard mug of sugar. Add a drop oh white wine vinegar, and a splash of vanilla extract. Whisk until stiff, probably ten minutes on a high mix.

    Haha, just had a go at doing these!! I chose blue and red (only colours I had) plus a mix of the two for purple... Well... they came out great, recipe is perfect (thank you Jemma) but they look like Aquafresh toothpaste - face-palm!! lol Peeps, learn from my mistake :) taste GREAT though xxx

    I get the same rainbow effect bye ha feeling my piping bag couple drops of food colouring down the side using a chopstick lightly poking pushing the colours down the side of the bag give the chopstick a nice big twist as you pull it out repeating this with 4 colours you get a desired look

    As a young girl, when learning to make meringues (after learning to make Italian meringue,) I was taught to warm the sugar in the oven, like when making jam. This step is never used anymore.

    Also its best to keep them in the oven for about 30 min (when they are ready and the oven is turned off) to rest so they dont crack from the sudden cold air

    What gas mark is 100 deg c? Why do you take the meringues straight out of the oven when done, as some recipes say to leave in oven to cool down?

    my meringue is dry and conpletely pulled off from the tray, I baked them around 45-60 mins. But why when a couple minutes off from the oven the top of the meringue is sticky to my fingers, like melting sugar. Is it because of the humidity in Indonesia?
