Vegan Sundubu Jjigae or Korean Soft Tofu Stew Recipe | Asian Food

- This Sundubu Jjigae (which literally translates to ‘soft tofu stew’) is one of my favourite Korean dishes. It has a light yet really rich and flavourful base with a kick of spice from gochugaru. This is so comforting and perfect for warm and hearty meals with a bowl of steamed short grain rice, kimchi-jeon and some banchan (or side dishes) like kimchi!

Is that tofu means paneer ?? Thing
@@jungurung3465 tofu and paneer are two different things, one is made from beans the other is cheese, I recommend looking each up that'll make it easier to see

Great recipe, we loved it. Made this for my bf and me.. the only problem was i spent the whole morning on the toilet😂 it might be because of the enoki mushrooms or because my bf bought the wrong chili flakes which was 5x more spicy than gochukaru😂

You can try out calabash or even chayote. Both very subtle in flavour. Or you can just leave this part out and add more mushrooms/tofu. Hope this helps! ◡̈

This was so good but would use stock next time as it came out a bit watery. Any specific veg stocks u would suggest? 😊
I like to get those in tetra packs and don't really have a particular go-to. Pacific Foods has vegetable broth I've used before that was food. I also recently discovered a trick to get a bit of body to this soup by diluting some rice flour in room temp water and mixing it in the soup ◡̈

Can I substitute the Korean paper with cayenne pepper? If so, how much I should put ?
I haven't tried it but you can, tho it'll slightly differ in flavour. It's also spicier than gochugaru so I suggest adding half first then adjusting from there. ◡̈
