Don't know about korean food but Indian food really depends on the region. Some regions in India have very vegetarian friendly food and some have lots of non vegetarian heavy food. But you are right Indian vegetarian is truly elite.

I’d argue that Korea is one of the worst countries for vegans and is sometimes referred to as the vegetarians hell. There are some chains that are vegan and many meals you can make yourself but it is not a vegetarian friendly country whereas India is.

@@-zain4362 i think veganism is slowly gaining popularity in korea. most koreans didn't used to eat as much meat as they do now, but after the wars, they started eating more meat, as they could afford it

Hi everyone!! So excited to get to know you all better! Here are the measurements written our for y’all 😋 Remember to adjust to your own taste and feel free to experiment with adding diff veggies!
Kimchi Jjigae
1 tbsp oil
1 onion
5 cloves of garlic
2 box tofu
5 cups kimchi with juice
3x6” sheet of Kelp
4-6 Shiitake mushrooms
1 tbsp gochugaru
1 tbsp gochujang
1 tsp salt
1 tsp sugar
2 tsp sesame oil
3 green onions
Japchae
1 pack sweet potato noodles
1 zucchini, shredded
1 carrot, shredded
1 yellow onion
7 shiitake mushrooms
- Slice thinly
- 1 garlic clove, minced
- 1 tsp sugar
- 1 tsp soy sauce
- 1 tsp sesame oil
3 garlic cloves
1 tbsp toasted sesame seeds
1 large handful spinach - blanched
- 1 tsp soy sauce
- 1 tsp sesame oil
Hot and Spicy Rice Cake with Ramen (tteokbokki)
1 pack cylinder rice cakes
4 cups of water
1 Carrot, thinly sliced
4 Green onions, 2 inches long
1/2 White onion
2 3x5” sheets dried kelp
3 cups cabbage, roughly chopped
4 Shiitake mushrooms, thinly sliced
4 tbsp Gochujang
1/2 tbsp Gochugaru
2 tbsp Sugar
2 tbsp Soy sauce
3 Garlic cloves, minced
1 instant noodle pack
Hi Jasmine! In the Japchae if you substitute soy sauce with tamari, which is basically gluten free soy sauce, the dish can be made vegan and gluten free at the same time! Hope that helps.😀
Where do you recommend we get the potato noodles you were talking about?
Most Korean soy sauces I’ve seen are gluten free. My favorite is the “YOON JI YOUNG ganjang” from Amazon or you could just search for “Korean soy sauce.”

For the Japchae, you can also use gluten free tamari. Tamari is made the same way as regular soy sauce just minus the gluten. In my opinion it taste much better than using liquid aminos.

Same! I can't get kimchi in India...thanks COVID 🙄. I'm gonna make my own kimchi but it won't be as good bc we don't get the right kind of cabbage or korean chili powder 😭.

Korean food is so easy to veganize! Love these recipes because these are almost the same normal recipes you would see in a korean household. Removing meet only makes a small difference

This lady is very good at narrating what she’s doing and makes it easy to follow. When she talked about the adjustments she’s made to the recipes, or when she switched the frying pan, it made the recipes seem more approachable because she showed that mistakes are fine.
I’m so happy to see you using regular table salt, or iodized table salt, which is really important in a vegetarian or vegan diet.

Isn't iodized salt important for everyone except people who eat fish regularly?
You don’t actually need iodized salt if you use sheet of kelp for your cooking which contains much more iodine than recommended daily intake (2000%)

I love love love Korean food ever since traveling near Seoul in 2016.
Recently I switched to a Vegan diet. Two thing you are adding are not Vegan in the strictest sense. Sugar is bleached with bone char and most soy sauce had anchovies or other fish.
Maple syrup is a great replacement for sugar. It adds a flavor note I think you will love.
Liquid Amino is the alternative for Soy sauce.
You mentioned looking for Vegan Kimchi. Most Kimchi has fish sauce. Making your own Kimchi is an option. It is time intensive.

I made the Japchae recently, I didn't snap any pictures but I enjoyed making it! I was a bit too light-handed with the flavouring since I was running out of sesame oil, but I have enough ingredients to make it again!! I also used aubergine instead of mushrooms and the marination made them so tasty!!!

Maangchi has a one pot easy japchae recipe that doesn't even require boiling noodles. I make it this way all the time and it literally cooks up in 10 minutes.
