  • The Penang Char Kuey Teow recipe
    Char Kuey Teow is now world famous.
    Siam Road Char Kuey Teow of Penang has ranked 14th on the World Street Food Top 50 list at the World Street Food Congress 2017 in Manila held from May 31 to June 4.
    It was described as the classic traveling food cart on four wheels. Mr. Tan cooks it over a perfected-­over-the-decades wood-fired wok, and the smokey appeal is the reason for the lines wherever he drags his char kuey teow cart to.
    People are crazy about Mr.Tan’s noodles and willing to queue up to three hours just for a plate of Char Kuey Teow.

    This obviously takes practice to master, so don’t be disappointed if it doesn’t turn out as you had expected. I for one tend to panic whenever I fry fast with the wok; that’s when my little one will come and distract me! Having ingredients ready to go is the key, and be organised. I like to go through the process and sequence of ingredients in my head so I don’t overcook or undercook anything. Thank you for the detailed explanation and demo!

    I tried today. But bean sprouts i add 1 min before i turned of the fire coz i love them halfed cooked and raw. Hehe turn out delicious, delectable yummy. Thank you very much. Of coz i used halal sausage and fishcake. Hehe. Thank u again. Been wanting to make this for ages!!!

    Tried few times and failed, came out too wet and egg sticking to my wok, also maybe cuz i tried to cook 2 portions in. the wok. Tried again using ur recipe and vid guide, and it came out much better! :D

      Always cook 1 portion if making this dish. Vendors do the same. I haven’t seen more than 1 portion cooked at the same time. Add a little bit of sambal if you like it spicy.

    Nothing beats a Chinese char kway teow. It's very popular in Malaysia. Sometimes there's not even prawns and fish cakes. Only cockles are sufficient.

    Thanks for the recipe and I love it so much! Actually, first time I tasted this when I was in Penang for a holiday last year and I tried to cook here in Manila by following your recipe but I used the Thai flat rice noodles instead. My family likes it too!

      Reynoso Cadaba Not everywhere can get the fresh Kuey Teow. As you say, the Thai’s flat noodles is the close substitute.

    Dude, I've just tried cooking this recipe for 3 portions. By far this is the closest one I've tried. But for our taste, it was too salty so I added 1 teaspoon of sugar to balance it and it was kinda perfect. I'll try again with one less teaspoon of soy sauce, and it might be perfect for us. Thanks for the recipe though!

      Try using naturally brewed soy sauce instead of just reguler soy sauce. That’ll make a lot difference in taste.

    I will try this tomorrow! I've cooked char kwe tiau twice but I failed miserably and I cooked big portion too for the whole family. I've learned my lesson now, will do 1 portion per wok tomorrow. Hope this recipe brings me back to penang.

      Only marginally different. Use soy sauce alone is just fine.

    Hi Kwan, Penang Char Kuey Teow is one of my favorites. I was wondering if the prawns should be stir-fried for awhile only and then removed to avoid being overcooked. To put the prawns back in when the heat is increased for the final stir-frying and smoky aroma effect. Thank you.

      Hi Moses,
      Please do that, especially if the prawns are small. I have seen some hawkers to that. Some just cook like me to leave the prawns in the wok, like this video by a hawker at Burma Road, Penang.

      I have tried this one. The addition of vinegar makes it close to the dish I ate in Sarawak. Not quite as good for my palate as the street food. thechai.ninja/sarawak-kolo-mee-recipe/

      Yes! The Penang CKT by the Chinese, are always the dry version and will have some lard too! The Malay version are wet and is more saucy.

    Bring the cockles to a boil in half inch of water and immediately switch off the stove , then let it cool for 10 mins. This way it is much easier to remove the flash.

      Cockles in CKT usually I see other hawkers give a pinch of a handful ( about 4 to 5 pcs ) . Not cocos .

    The word ‘Char 炒‘ is already a verb, an action. Why people are still saying ‘Fry Char Kuey Teow’, putting two verbs/action together?

    everything was smooth except when the time when he said KUEY TEOW🤣, it like a an apple without an apple. Mind you KUEY TEOW or KWAY TEOW is a direct pronunciation from a dialect in south east of china 潮汕 (ChaoShan) area. The correct english word for this Kuey Teow is actually RICE NOODLE

    Come over to Restoran Sun Heng Kee in Ipoh.....Fireking..Char Koay Teow...2 Jalan Centrepoint Pinji....experience the real CKT of the sixties..you will never regret it.... charcoal fire makes no difference from lpg ,,its the temperature ....

      They do add pork crackers (deep-fry pork fat until crispy), but certainly doable to make it halal with prawn and fish cakes.

    My fav food in the world ! I was in KL + Penang a Few weeks ago & I eat it almost everyday 😊 I never Know it needs oyster Souce + fish source in it ? Have I been cooking it wrong ?
    I tried to make a lighter version of this with Olive Oil. . .

      Most people use oyster sauce. Fish sauce can be omitted. The only problem by using olive oil is the smoking point is lower. So if you ever use very high heat to fry the Char Kuey Teow, olive oil cannot resist the heat and turn into smoke. Otherwise, it should be OK. Thanks.

    Jikalau kueh Teoh bubuh serbuk lada putih ,kueh teoh u sudah out of recipe.. Pork lard pun tak ada .minyak babi pun tak ada tak boleh panggil Char Kueh Teow.. Thank u! .

    You are using an industrial kitchen fire with super heat, and not a home wok with a lower heat source. Please allow for simulated home stove burners and woks.

    我发觉你炒粿条的动作怪怪的,不是吗?这不是快速,而是很紧张的样子。那些司含不应该留到最后才放进镬的。因为它比较迟炒熟的食材。韭菜应该留到最后才放进去才划算。改善改善一下吧。

      Siham is already half cooked when he put hot water at the beginning to deshell ..and he also said most people prefer the Siham rear, yummy ..
