  • Did you know that over seventy percent of olive oils are fake?
What Makes Extra Virgin Cold Pressed Olive Oil So Special?
Extra virgin olive oil is one of the healthiest oils you can eat. Sadly, most of the claimed olive oils you find on supermarket shelves are fake. So how do you know which ones to buy? In this video, I visit an Australian plus an Italian olive oil farm to get some insight into what makes good olive oil and what to look for when buying some. Plus to learn how this liquid gold, "first cold press virgin oil" is made from start to finish.
Olive oil is a type of vegetable oil that is extracted from olives, the fruit of the olive tree. It has been used for centuries in cooking and as a key ingredient in cosmetics and soaps. Olive oil is made up of different types of fatty acids, including oleic acid, which is responsible for its healthy properties. Olive oil contains high levels of monounsaturated fats, which have been shown to lower cholesterol levels and reduce the risk of heart disease. In addition, olive oil is rich in antioxidants, which help to protect the body against cell damage.
The process of cold pressing olives helps to preserve these healthy compounds. As a result, extra virgin olive oil is considered to be the highest quality olive oil available. It has a fruity taste and a slightly bitter aftertaste. It is also more expensive than other types of olive oil but worth every cent.

You promised to show how to spot the fake ones. You failed to deliver on that. Instead it was a long commercial for this particular olive oil, and a bit of information about differences, but nothing that the regular consumer could check (such as how long the olives spent being transported). At the beginning you showed 3 olive oils you deemed "fake" as you were pouring them. So the expectation was that one could recognize fake olive oils by sight.

25 years ago I was living and working in Portugal and they kept all their cheeses in their local olive oil with some peppercorns and a few olive leaves. You would use the oil for salads and spreads. It was semi solid even at room temperature with chunks of olive fruit and had a fruity quality to it. You simply can not get an olive oil like that here in Canada..
Olive trees were plentiful around everyone's home. When the olives were ready to harvest they would lay cloth under the trees and beat the olives off the branches with a stick. They would pick out the bulk of the twigs and leaves, then take it to the local press where each family's harvest would be weighed. They had ancient old stone presses to make the oil, and all the olives would go in. The resulting oil would be distributed per weight to each family in accordance with the weight of olives they had brought.
I still think about that olive oil and how delicious it was.

I'm Italian, born and raised in Milan, but my grandparents have a house in Umbria (central italy) where we have a couple dozens of olive trees. Every year we produce our own oil (for the personal consumption of the family), just like the majority of the neighbors there (a lot of people have vines for grapefruit and to produce wine instead of having olive trees).
That oil is more viscous, it's of a bright green color and it's a lot tastier (even a bit spicy) than the regular oil you might end up buying at a supermarket.
That type of oil is called "green gold" because of how valuable (and expensive) it is.

Good information! I have a little olive grove in southern Italy with 40+ trees. Cockatoo sounds great and looks like they make a lot. I was bit taken aback by the waste of the pulp as I am sure they could get more oil from the pulp but maybe they have a really good system. From my trees, I can get maybe 200 litres on a good year with the traditional cold press. My local press guys really do the traditional method. The olives are crushed by big stone wheels and then the pulp is pressed between hemp type disks by a hydraulic press. Then separation of oil and water by centrifuge. Two points in the video not so clear; The criteria for Extra virgin olive is the acidity. Other factors are not really taken into account. But if you have followed the rules: 1) clean olives 2) Greenish not overripe olives 3) No damaged or diseased olives 4) The minimum time from picking to press

@@madaboutvoice More than likely! There other ways of collecting oil from pulp. Another typical modern way is: If you dip a stainless steel in the crushed pulp, the oil sticks to the metal and then you brush it off. Repeat again and again. This will still give good quality oil but you lose the body. Oil using mechanical pressing is much thicker and deeper in colour- especially as soon as it made. In fact- this oil should be left for it to settle. We get a little waste in our oil because of the deposit which we typically filter and make soap! Also depending on the type of olives the taste/colour can be very different.

The best way of harvesting on Corfu Island is still with a donkey.
They lay out huge nets under the trees and collect the full nets with the donkeys. It is very hard work and it takes more time than a harvester needs.
Just remember, harvest early in the morning and press the oil on same day to keep the olive oil fresh and healthy.
Harvesting trucks need streets and they cannot drive uphill and downhill and between narrow trees.
The olive farm in the film had trees planted in a row with at least seven meters between the rows. No naturally grown trees in this film. It is a commercial for an olive farm.
This kind of space between trees is not in a naturally grown olive wood on corfu.
I prefer the old natural olive trees and I appreciate the hard working people who still harvest the olives like their grandparents did.
In my family we prefer Greek olive oil.

Over a million small farms were established in the US last year. This isn't covered in the news at all from what I've seen, but I think it means at least in part that people are beginning to take steps away from the established broken and corrupt food supply chains. Bottom line, the best way to eat well is to remain close to the source. Learn to cultivate plants, hunt and fish, buy directly from farmers in your area. There is no shortage of high quality food. It's just that the grocery store is more and more a place to avoid.

    • @ReflectedMiles
      @ReflectedMiles Рік тому +2

If by "completely wrong" you mean that it failed the fridge test, then it may still be exactly what it says it is. That part of this video was just promoting an old wives' tale that was debunked long ago. In fact, adulterating EVOO with a little bit of cheaper, more saturated or waxy oil would result in it being much more likely to _pass_ that test, not fail it. There are no simple proofs of it being what it says it is since authentic EVOO will perform differently depending on olive type, growing conditions, when and how it was processed, how old it is, and other factors. The best way to ensure what you're getting is to find and source it directly from the grower or grower's distributor, with the season, best-by date, and all details that make sense printed right on the bottle.

This is the province with highest concentration of olive trees in the whole world (and highest producer). We specialize in it (I am a producer) and we export quality. Stay away from mixtures (oils that state they come from Italy, Spain, Tunis, etc.) as these are usually adulterated and not as good, pick a single country/province and research their production systems.

This inspired me to do my own taste test with the 2 EVOO’s I keep at home. One is quite expensive and I use it like medicine, taking one tablespoon each day. The other is a little less expensive, but not cheap, and I use it in cooking. The more expensive oil has a very pronounced peppery taste with a bitter finish. The other has a peppery taste that is a little less pronounced and I got an unpleasant chemical flavor. Guess I won’t be buying that less expensive oil again. I also put a small dish of each in the fridge to chill…we’ll see how that turns out.
Wow! The refrigerator test showed the less expensive oil as more solid. The expensive oil was mostly solid but with a ring around the outer edge that was fluid. If I understand correctly, the less expensive oil is more pure! I guess price isn’t a reliable indicator of quality.

Great info. The same adulteration goes with virgin coconut oil as well. Brands blend in refined coconut oil with a hut of virgin coconut oil to get the smell. The refined oil that's blended in has to be heavily bleached to match the colorless profile of real VCO. I know what happens in the industry as we are producers of the best quality virgin coconut oil, and the prices most brands buy from manufacturers is is simply so low that it's impossible to produce at those rates.

Can someone just answer these basics: 1. What makes an olive oil not "real" according to this video? They talked a lot about what makes a "good" olive oil, but I only heard one kind of vague explanation about what makes an olive oil not "real" (just adding a few drops of olive oil to other additives), but not how it relates to this 70% is fake figure. 2. If something is labeled "extra virgin olive oil" and that is the only ingredient listed, is it not just the oil from olives? In what way would these EVOOL's be "fake"?

    • @marten595
      @marten595 Рік тому +1

Fake is a very misleading term here. Studies have shown that 70% of olive oil doesn't meet the "international requirements" to be labeled as EVOO. That doesn't mean they are fake, it just means that they aren't given the distinction of being highest quality. Essentially, they failed the "extra virgin" portion of the test. They still qualify as olive oil.
Most USA-produced chocolate doesn't meet international standards for qualifying as chocolate. It's actually illegal to export it to Europe because of this. Again, that doesn't mean its fake, it simply doesn't qualify for international standards. (The EU requires milk chocolate to be at least 20% cocoa solids while the US only requires 10%)
I'm sure that cold-pressed olive oil is of a higher quality than most brand-name store-bought oils, but the rhetoric (fake, additives, chlorophyll + beta keratine) used in this video to make that point is misinformation. 70% of store-bought olive oils ARE NOT seed oils with a few additives.

Thanks for the information. Now I live abroad, and I hope to find this product in Canada someday. In Lebanon, many of us olive farmers sell our olive oils organically fresh to the areas within the country, and we bring some fresh olive oils home. We also follow the same techniques as the Italian man had mentioned. Put the olive oil in a fridge, and look for traces of thick butter like residue on the bottom of the lid. Another way to compare is to look for the consistency of the liquid and colour accuracy, which is a bit more complex to do. The main way to spot the difference is to taste the store bought olive oil compared to the farm home processed olive oil. Their is that rich, unique fatty taste that you get in organic fresh olive oil that you don't get many store bought olive oils.

    All the best.

I'm pretty surprise that coconut oil also considered as healthy as you said. I remember during my childhood in my country (one in SE Asia), coconut oil is always readily available in the market. And now, all of it are palm oil. Maybe you can make video about coconut oil also.

Absolutely fantastic episode Chef, I really learned a lot. Any idea if Cockatoo sells in the states? I’m in California and I’d really love to try their brand. I live about 15 miles from a olive oil manufacturer, maybe I’ll check them out too and stay away from the stuff Walmart sells. Thanks again.

Maybe you will be disappointed if you try real virgin olive oil at first.
It may taste bitter and it may scratch your throat.
Just try several different kinds of olive oils in a tasting.

There's no word that can express how amazing this documentary is,
You make me so happy, Chef Joel🌷
I fell in love with this beautiful place,...those trees, that lake, that luxurious palace, and these amazing huge machines, as if it's God's paradise on earth...It's a place where the majestic olive trees deserve to grow.🌿
Here we believe that olive oil is a godsend, and we talking about it with a kind of holiness.
And since we used it for lighting in the past, we now believe it can light up what's inside of you, making you healthier, more gorgeous, and more sublime.
Hats off to Ken Dugan🎩, he started with one tree and then he bought twenty thousand olive trees, and he planted another 20,000 olive trees, he made this imaginary Cockatoo grove from scratch,
it's a true love story that will not end with the passage of years.💚
