I'm a graphic designer moving onto motion design, program of choice is Illustrator. Can I just create these assets in Illustrator and import it? The newspaper layout and design.

Yes you can easily do that, you will just do the design steps in illustrator instead of Ae. Or use Photoshop, this is the option I like to use for anything that requires a lot of design elements.
