Then 1) create a new project 2) add any blank clip 3) add your previously saved video with the text and put it into overlay. 4) use splice on your overlay (lighten if it's a white background with a black font) 5) you can drag and change the size of text from your previously created video 6) you can add new text 7) export the project and repeat the sequence.
I agree. He talks too fast and doesn't explain what he's doing. I have to keep watching it at half speed and keep rewinding. I think this video is a little too advanced for me at the moment. I'll get there, but I need to understand what he's doing first.
Not trying to offend anyone but I think he’s speaking like that for people who Edit often so he uses vocabulary and slang that editors will understand someone who understands the tools and software

you can do this in detail from after effects, a nice after effects tutorial channel available on the motion notions channel
