I THINK (could be wrong) that the actual riff is in 11/8 (think of it as 5/4 with an extra 1/8th note every cycle). The china is just playing 1/4 notes, so every cycle it's displaced by an 1/8th note meaning it goes from falling on a down beat to an off beat. Every 6th cycle of the 11/8 riff they cut off the extra 3 1/8th notes so it becomes a bar of 4/4 (ie 11/8 minus 3 8th notes is 8/8 or 4/4) and then the pattern repeats Cycle 1 - 11/8 China plays on beats Cycle 2 - 11/8 China plays off beats Cycle 3 - 11/8 China plays on beats Cycle 4 - 11/8 China plays off beats Cycle 5 - 11/8 China plays on beats Cycle 6 - 4/4 china on off beats. I love the last verse when everything is accenting the implied 7/16, but the snare stays on the backbeat the whole time. So fucking smart. That's literally all they need in order to keep the quarter note pulse going while you bang your head.
Live music is very often faster than the studio-recorded version thereof. In the same way that you drive faster in a race than you do normally. There is adrenaline, there is excitement, etc. These things cause an individual to push the tempo.

There is a weird thing though - the verse is not on the 1 if you listen to Thomas' cymbal. This was one of the first songs that got me hooked and the more I listen the more I realize that it's a tricky-ass song. Both times they've played at Soundwave, Brisbane - Australia, shit has been crazy. But every Meshuggah video of other tours and shows that I've seen on UA-cam has been dismal.

The "sane... me..." part you're talking about at 1:40 could be counted as either 4/4 or 7/8 I guess, but considering that the rest of the song is in 4/4, I think that part is meant to be as well. The riff at 2:44 is also in 4/4, it becomes apparent when the drums join in. You can set a metronome there (2:52-3:08) to 4/4 @ 137 BPM and it lines up perfectly until 3:08 where the BPM changes. As in most mesh songs, it DOES line up, just not always where you expect it to.

It's awesome, but math metal makes my head hurt just like math does. I usually go grab a beer when bands play such brainy music. I like my guitar with 6 strings, my bass with 4 strings and my songs with a handful of yummy repetitive riffs changing every 4 measures, with a nice groove I can sink my teeth into. My exception would be Opeth. They have enough melody to keep me interested, although I still go grab a beer when they start playing. Not hating, just saying. Who moshes to math? \m/
