The Air Fryer Chicken and Vegetables Recipe You Need to Try

This Greek chicken and veggies combo is one of my favorite air fryer recipes. It's easy to make, works great for meal prep, and can be customized with other seasoning blends.
1. To make this version, large dice a red onion and bell pepper and add to a bowl with a pint of grape tomatoes. Toss with a tablespoon of olive oil before seasoning with a blend of 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon black pepper, and 1/2 teaspoon dried oregano. Air fry the veggies for 10 minutes at 400ºF.
2. While the veggies are in the air fryer, dice a pound of chicken breast and toss with a tablespoon of olive oil. Season with a tablespoon of Greek seasoning and 1 teaspoon of black pepper.
3. Transfer the cooked veggies to a clean bowl and add the chicken to the air fryer. Cook for 8 minutes at 400ºF until the chicken reaches an internal temperature of 165ºF.
4. Add the veggies back to the air fryer and stir together. You can serve at this point, but I like to use my air fryer's broil function for an extra 5-7 minutes for extra crispy edges (without over cooking the chicken).

I’m very picky when it comes to recipes. If they are not 4-5 starts I won’t eat them. This is one of my favorites in our regular rotation.
