To keep the onions or any breading to stick to the chicken, I spray the chicken with pan spray or brush with olive oil before adding seasonings then spray again before placing into air fryer. It stays on and turns out crispy. I love your recipes!

Thank you so much for all of these videos. I am a survivor of pancreatic cancer and HAVE to change my eating habits after I just had massive surgery and had six organs removed to get the cancer out of me! Good news is that I am cured and cancer free, but I have to eat differently now! This is going to be perfect for me to cook in a much healthier way!! And as part of your teaching service...do you offer coming over to my house and taking my credit card away from me so I stop buying air fryer stuff? Haha...I seriously just dropped $300.00 on a new Cosair, oil sprayer, a spatula/tong set, parchment, a set of bins/pans, and a veggie cutter...and OMG its all getting here tomorrow and I can't wait to try this out. You have me hooked!!! Also...can you do a video on how to use the Instapot? I have had one for a year but I'm too terrified to use it because I'm afraid I'll blow myself up lol

Just bought your air fryer cookbook this morning. I made the egg cups for breakfast this morning with turkey sausage and am making the parmeasan crusted salmon tonight. The steak and mushroom bites will be for dinner tomorrow. I can tell that I should have bought a larger air fryer right away, but I think I will keep the current one as well. Then I can do side dishes at the same time. I will definitely be making the teriyaki chicken sometime this week too. So many great ideas. Thanks for the inspiration and knowledge.💖🙌

Hi Cathy so good to see you today! This looks scrumptious and yes I feel the same way as you when it comes to chicken thighs ,( ewe) I tried the chicken thigh recipe in your cookbook and honestly it was delicious! The best part was I cooked it in my new Cosori Dual Blaze and not having to turn it or preheat it it was great, not to have to look at the thighs till they were cooked was a real bonus!
Let me just say nobody in my family is getting this Cosori because I absolutely love it. Everything I’ve cooked in it has been from your cookbook and it all tastes amazing!
Thanks again for all you do for us! 🤗💕

This 72 yr. young, goofy woman (Me!) could sure use some help from other Commenters. I’m pretty sure I bought Cathy’s e-book version of her recipe book, but I can’t locate it. Where do Saved videos get stored? I am using an iPad. Also, if I “Save” a UA-cam video, where do I find it? This channel is one of my Top Faves! Cathy is terrific. I watched her Air Fryer Comparison video and ended up getting a red, 3.7 qt., Cosori. I am hoping its size will be big enough for making full meals like these for just me and my hubby. Also, how is it that Cathy, who has 8 (!!) children doesn’t have a stove top?!?! Thanks in advance for any help you can offer! 🙋🏻‍♀️

  • @deanmar9002

I use the Kuhn Rikon shears. You can get them in a 4-pack on QVC. They cut easily through so many different things, especially chicken. I use one for food in the kitchen, one in my craft room, one for gardening, and one in my tool box. The handles come in different colors so it's easy to color code them for different tasks, especially to make sure the ones used for food stay in the kitchen. They're so useful and sturdy. And they're self-sharpening! I often give them as gifts because they're so great.
Also, when I get chicken breasts that are so thick, I cut them in half lengthwise. Then I don't have to pound them out. They cook quicker and the ratio of breading to chicken is usually more balanced. I just cut the cooking time down a bit and temp them more often so they don't overcook.
One more thing...if you let your chicken sit out for a bit before dredging it, the breading will work better. When the chicken is so cold coming straight from the fridge it affects the liquid it's dipped in.

Hi Cathy! Just for something different to cornstarch, you can try using arrowroot. Arrowroot is clear and glossy, so cooks will often use it to thicken fruit dishes or pies. In contrast, cornstarch makes a dish slightly cloudy or chalky-looking. Taste: Cornstarch and arrowroot are both tasteless. Neither one will alter the flavor of a dish when you use them as a thickening agent.

You can get more chicken breasts if you cut them in half horizontally that way you don't have to pound them out. One chicken breast can then serve two people.

Hi Cathy.i have made the French fried onion chicken before. To make the onions stick, you have to dip the chicken in flour first, then egg, then the crushed onions. It works better on thinner chicken pieces. :)

On the crispy onion chicken try pounding the chicken down to 1/2 " for quicker cooking and top with salt pepper and presentation side with mayo then crushed onions cook 350 until 160 internal temp don't flip. Let us know if that works better, I will try too.

A little hint you may not have figured out. With the Instant Air Fryer (I just got mine last week) if you use the Reheat mode and just set the temp and time to what you want, it skips the preheat cycle.

Looks hearty and delicious. There's nothing like EASIEST 5 Ingredient AIR FRYER Recipes With CHICKEN!!!! One of my best recipes was handed down by my grandfather who was part of a traveling band of clowns which toured the country in the 1930s and 40s. Not only did he fully participate as a performer (juggling and spraying seltzer mostly) but he was also in charge of the Clown Chuckwagon, and over the years, came up with a nice selection of mostly campfire stews (or "or stewge" as Gramps used to call them),, soups and casseroles. One of my favorites, casseroles, which I still prepare frequently, consists of baked beans and wieners (for the KETO portion of the meal), macaroni and cheese. and a couple handfuls of those big orange circus peanuts - a sweet yet savory bake-up that's a hit with everyone who tries it. Gramps had one clown name for performing with his fellow troupers at carnivals, civic events, etc., throughout the central Midwest ""Antsy Pants" - but around the campfire at breakfast or suppertime, when most of these talented vagabond buffoons had removed their make-up and hung their giant shoes in their campers, (but oddly enough not all of them) Gramps was affectionately known among the boys as "Yummo." He told me how it wasn't unusual for farmers to donate a hen or two and maybe a couple of dozen eggs, in return for a brief barnyard slapstick performance by a couple of the boys for the farmer, his family and his hired hands.. He also told me as soon as he got back to camp with the chickens, the alcoholic Geek who traveled with them would inevitably beg permission to bite the heads of the pullets when Gramps was ready to get those birds cooking. Seemed that this particular Geek actually not only savored the taste of the live chickens he was required to eat (which were usually provided by the promoter of the event at which the troupe was performing) - but craved more when "off=the-clock" Talk about a Carnivore diet!! Wow!!! Reportedly, he was known to comment that "live chicken pairs well with a pint of Carstairs White Seal Blended." By the way, Grandma also traveled with Gramps. She was the seamstress - making a good number of the clown suits from her own design and repairing all them when required. So of course Gram and Gran rolled along from town- to -town with a big foot pump operated sewing machine in their trailer, - in addition to all the pots, pants, cutlery, stirrers, etc. My Dad was born in a campground in Posey County, Indiana, delivered by a local midwife and plopped into a casserole baking dish as soon as Gramps cut the umbilical cord with his second best onion chopping knife. As for me, I married young and did well for myself in doing so. My wife is the daughter of an oiutdoor parking lot magnate in a major city in Ohio. I was dowried with three downtown lots. I've had a comfortable life pretty much doing whatever I want all day while other people collect money on my behalf while sitting down in booths, watching TV, reading (or even snoozing between customers arriving and honking the horns to wake 'em up). Consequently, for awhile, I was able to open a couple of storefront business which specialized in selling "clown suits for the whole family," including custom made if somebody wanted them - and even clown suits for the family pets. The seamstresses I hired used Gram's patterns, of course. . The stores were called "Hem and Ha!" - and with every sale, I usually threw in a copy of one of Gramps' recipes for a clown casseroles, "silly stew," "buffoon bread, "Punchinello Porridge,," or what have you. Of course, they all pair well with seltzer water. Thank you Fabulously Frugal for allowing me to share. Bon apetit!😁

Richard - what an awesome recount of family history! I hope you have all of this recorded somewhere for your posterity. Eating live chickens - gross! Love your grandpa's nickname.
