OMG, this crust fried in sunflower oil is to die for. Perfect as it gets for tender flaky light crust!!
I grew up on fried pies... My mother made all different kinds, but her chocolate was different. I've seen the ones you make in this video a lot, but I haven't seen very many people make the chocolate ones the way my mother did. Her chocolate was more like a paste than a pudding.
I can make ANY Fried Pie... except Chocolate Fried PIes... I don't have a good chocolate filling.... what is your mother's secret? WAIT... you said it was more like Paste than pudding... Right? If you know anyone that has a good receipt I'd really be thankful...

Then she turned the heat up and allowed them to brown. She didn't deep fry them either. She used just a small amount of shortening. Sadly I don't have the recipe. I've never eaten any cooked like hers. It's most likely a very old recipe because she learned how from her own mother and they've both been gone for many years.

How hot is your oil? Do you use a thermometer? I have trouble trying to find the correct temperature. First very oily and then quickly goes to burning. Any help appreciated.

I was once poor, My father died when I was 16, my mother had remarried and lived on the other side of the world after being stationed where she was. My dear sweet grandmother was in a nursing home, no aunts, uncles or cousins to go to. I lived briefly with family friends but was ashamed to be fed by people who had their own troubles.I got a job as a receptionist file clerk in a law office because I was raised polite. THAT got me the job...yes sir and no sir to my elders and everyone who came in that office was way older than I. I lived on soup, meat once a week, in a tiny two room apt. My bed was the fold out couch, the large kitchen was the second room and there was a bathroom. SLowly I worked myself out of working class poverty. It took years... there were times I was late with my rent, or electricity, so I SO wish you the best. I was poor but proud. I hope your pies sell WELL...if there is a truck stop near you I think truckers would be thrilled. THey pass the word around when they run into something as special as homemade fried or baked hand pies...WIshing you the very best and God BLESS

Ordered my new 6” pie press from Amazon Saturday & is to be delivered Monday. I plan on making the dough Monday morning, refrigerate & I will be ready!! I bought a bag of apple filling from an Amish Bakery when in Berlin, Ohio. Do you have other recipes for filling Re: lemon, coconut & your chocolate. Your instructions are very helpful and anxious to try your dough as I believe it is what I am looking for!!

Yall talk like we do here in good ole arkansas.I have made peach and apple fried pies but no lemon or choco;ate.I allways made them where pre bake the crust and I make my home made pudding.The light in your bowl it was dark hard to see it, you need to be right under a bright light thanks paul

I use my moms recipe
2 c sugar
2 c milk
4 Tbsp cornstarch
Pinch of salt
2 Tbsp cocoa
Cook until thick add 2 Tbsp butter
Let cool. Fill pies and fry
