    I really like you are doing it in small amounts . As a single person I’m always trying to cut down everyone’s recipes to a reasonable size for one person. It is so easy to double/ triple recipes but more challenging to divide and still get it to work. Going to try these tomorrow.

    Hallelujah Roy, I've been searching for a recipe that was like what my mother made. You come the closes, she would Fried Apple Pies. Starting with peeling and coring the apples and cooke them down, sweeten them up and make dough and fry away to happiness. I'm using your recipe.. You saved the day. Thank you!!!

    Thank you so much. Finally a simple crust that's not biscuit dough. You taught me sooooo much in this video.One of my best memories as a kid was my Mom sneaking hot cherry pies from McDonald's into the movie theater. That night I feel in love with Star Wars with a hot cherry pies in hand. It was a summer night and on the way home there was a billion brite stars in the sky and a warm breeze on my face. I can't eat a fried pie without remembering the magic of it all. You just gave me the knowledge to recreate pure kid joy. Thank you again !!!

    This is perfect. I love pie too. I hate making a pie because I never finish before the crust turns and the filling jellies. I would make at least a dozen and freeze 10... maybe 8. I'm alone so there's no need to share. I'm picturing myself with two pies a scoop of vanilla ice cream...tonight.

    Yum! Hostess pies have been crap since I have been old enough to develop better taste buds. I tried to eat one a few years ago and it was awful! I’ve always wanted to make my own. Now I know how. Thank you!

    Hi Roy, I just found your channel and it looks like this particular episode is two years old. Maybe you wont even get this message.
    As a pastry chef/chef, I want to tell you job well done! Wow!!!
    I also wanted to mention that actually the dough that you made would be officially called a French tart dough. It is just a fancy version of a regular pie crust with egg added, sometimes sugar, and definitely made with butter never shortening. Occasionally a squirt of lemon juice.
    It is also the same French tart dough that you would use to make authentic quiche, minus the sugar.
    I’m not sure if you mind, but I’m going to offer a couple tips to take this dessert over the top.… not that you have to do anything to make this superb. But we cooks and bakers always try to take it up a notch.
    I did not notice if you chilled your dough (disc)right after you made it. With as little handling as possible during the mixing process, wrap the dough up and refrigerate it for an hour or even overnight before rolling them out into individual balls. Then once you make the hand pie, refrigerate them again, just as you did, before frying.
    The whole purpose of the chilling is to keep the butter ice cold so it will remain separate from the dough-so that when the frying process takes place, it forms the layers. It sounds like you figured that part out.
    On the cherry pie filling itself, you also could make up the fruit filling over the stove, and let it chill before making the fried pies. I would add a smidge of butter and a drop of pure almond extract to the filling.
    For the icing, add a smidge of pure vanilla.
    PS
    Unless you have a sour cherry tree in your backyard, they are very hard to come by unless you have a source. They are mostly grown in places like Michigan.
    Some orchards will carry them in the spring -early summer when they are in season. You can buy them in a large tin frozen in a “slush- pack.”
    Sometimes you’re able to get them from certain gourmet stores that offer unique items.

    Always make a double recipe so you can hide the evidence of having eaten half the pastries.

    I grew up on Hostess apple pies and a glass of milk. Those were my pick above anything, even homemade. Over the years, the taste and changed and now all I taste is sweet and I no longer enjoy them. I may have to try these. The look really good.

    I'm so excited to save your video. Loved seeing you make these and hope to make apple tonight. Would you add anything to canned apple pie filling? This is Walmart brand. I usually add a bit of butter and make the apple pieces smaller. I have also straight out of the oven sprinkled sugar over them or near done added some egg wash on top to brown more and sprinkled sugar then. I may have done the egg wash initially plus the sugar then baked instead of deep dry. Appreciate this and will share on FB!!

    If you were to use fresh cherries would you just cook them a little bit and add sugar? Is this recipe interchangeable with other fruits?

      If you add a little sugar to the fresh cherries after pitting, they will give off alot of juice. Cook that juice down a little and or add a little cornstarch to help tbicken

    When you added the cornstarch to the cherry juice, what was the purpose of you banging the spoon on the side of measuring cup then put it in mixture and stirred it up. Im curious of why you did that????

      Idk about everyone else but in my personal recipes unless it is specified as a special type of flour it is always just all purpose flour and I think that is the general rule for most other printed recipes. If you're ever unsure you can check a couple different people's recipes against each other and usually that can clear things up. Also, comparing recipes can help you tweak things here and there to come up with your own version.
