100% Italian here Grew up making homemade ravs. Our filling was always ricotta egg parsley, nutmeg seasoned with salt pepper touch of sugar. dont think we put parm in it but its been a while since ive made so maybe we did...But never never put garlic in delicate ricotta cheese. Garlic is in the sauce not the cheese

Yes, sugar is good added to vinegar salt in bottom of bowl then wisk in oil before adding salad..Also raw garlic rubbed inside that bowl with that anti pasta salad is good

A tip for those who want ravs now Pasta can be a bit tricky to make by hand and takes practice. But If you have a Whole Foods Market they have the best fresh handmade pasta made daily. Then you can just buy can whole peeled tomatoes and whip up the sauce. Also Whole Foods has the best Tres Leches Cake in chilled desserts section! Hands down best ever!
