why do they kick w/ using the foot as the part of your body that creates impact? in muay thai and kickboxing they use their shin. its a much harder surface that wont break as easily and it will do more damage

No fancy shit cause it doesn't work in a real fight. That's why most so called "traditional martial artists" get their asses handed to them in MMA.

Roundhouse and hook are different, in JKD hook kick is not done chambering the leg like a roundhouse kick, it is slightly different and more direct.
