I think all the youtube chefs/cooks need to take a page from your book. Your filleting is so clean. Utilizing the entire fish, head included, is the highest respect one can give to what the ocean provided. It irks the hell out of me seeing all the other UA-camrs leaving chunks of meat on the carcass of the fish when filleting, almost like they are rushing through it, and just discards the entire thing. Definitely have great appreciation and respect to your approach.
When it comes to the technique, plating and the originality of the recipies - your skill and talent really makes your channel something special. Truly inspiring.
Taku that Chinese is my very favourite way to eat whole fish. Not large but say a bream, a small snapper, I've even done it with whiting. I love all the green onions, herbs and ginger and the hot oil just makes it complete. However I could watch you make sashimi and sushi all day long. Watching a professional like yourself is so interesting. I've been subscribed to you since you had less that a few thousand subscribers and I knew you would blow it out of the ball park with your increased subscribers. It's because you show foraging, fishing, cooking etc and it is all wonderful to watch. It does make my mouth water though. I love to make sushi, love Thai, Japanese anything but typical old fashioned Aussie food which is where I am from. Keep up the most excellent work my friend. Michelle

Watching you fillet that fish was super satisfying! Here's a tip btw, when you juice your limes and lemons, stick a fork in it and rotate the fork while you squeeze, it'll get ALL the juices out. WAY better than a hand-press juicer even. Loved all 3 ways too. ughhh cravingss.....
I’ve never seen anyone filet a halibut like that, in two pieces, I like it! We usually score it down the backbone and do it in quarters. But up here in Alaska we’re, hopefully, working with much bigger fish. I’m glad you kept the cheeks too, my favorite part! Like you said, almost like a scallop. Also, loved the slo-mo of your hands while making the nigiri. Just before you cut to that I literally said that I loved watching sushi chefs make nigiri, their hands and finger movements are so practiced and precise it’s almost relaxing to watch.... awesome video!

I'm from Washington state(now in Pennsylvania) and I loved catching salmon in the rivers(lost a 30+lb king) and fishing for big halibut is sooooo tiring, I caught my halibut up in Ucelet Bay(or however you spell it) in Vancouver B.C. when I was younger. Also caught salmon up there as well. Halibut is like reeling in a piece of plywood! I primarily fish for bass as a sport, but love the thrill of catching big salmon and halibut! Awesome videos! You're making me hungry!!
That is one of the best spots on the bay for halibut. I used to live in the neighborhood you were fishing off of. The charters frequently show up. The halibut are what made me learn to fish. I now fish from my Old Town with the minn kota

Love it, I didn't know halibut grew that big in CA, my home state. Always thought it was only in WA. But, having the ability to troll on a sandy bottom, that is amazing. When growing up in the summers in WA, I would catch flounder, fillet and put the all the bony parts in a crab pot for a few day. Pull up half a dozen Dungeness crabs for a feed. You should freeze and try that outside of the bay.

SOOOOOOOO COOOOOOL! Really good skill! Btw , We Chinese people rarely use dried chili peppers, especially Cantonese cuisine, when steaming fish. We only need scallions, ginger, and special soy sauce for steaming fish (some fish can use a little sugar to replace the effect of MSG) btww, 99.99% of the time, we don't use MSG to steam fish
