My son brought home a small halibut today from his first time pier fishing. I don't eat fish and have only cleaned one bluegill 40 or so years ago so I really needed these easy-to-follow instructions. I used a sharp carving knife and ended up with 4 tiny fillets. Thanks for the tips.

The best thing about this video is that you used a Dexter Russel knife, your technique is flawed from the start, you can see the lateral line on both sides of a Halibut, the inside out method causes the first loin to be interfered with by the 2nd loin when you do either side.
This is some rough filleting. I totally agree with you. That was some fish butchery right there.
