Ingredients
Step 1
Add and cook and stir for 2/3 minutes
100g Vegetable Oil
7g Cinnamon stick
10g Whole black pepper
4g Onion Seed
2 Bay leaves
3 Black Cardamon
5 Green Cardamon
50g Garlic & Ginger paste
Step 2
Add, keep stirring for the next 15 minutes until soften
Then add water and simmer for 1 hour
480g Onions
80g Red Pepper
30g Fresh Coriander
15g Fresh Green Chillies
15g Salt
1.5 Large tomato
192g water
Step 3
Add Chicken on bone or chicken breast
Keep stirring every 2/3 minutes to breakdown
the onions for the next 15 minutes
1.5kg Chicken
Step 4
Add Spices and keep stirring for the next 5 minutes
8 Chillies Powder
10g Turmeric
8g Coriander Powder
5g Cumin
6g Paprika
Step 5
Add, bring to the boil and simmer for 25 minutes
2 large pinches of Methi leaves
Small new Potatoes cut in Half
Water 200/300g hot water
4 Tbsp Lemon Juice

Chef Din...You've revolutionised the way I cook my curries - I'm still getting the hang of the temps needed to soften the onions/veg bit (having had the BIR method of HIGH HEAT, HIGH HEAT, HIGH HEAT mantra drummed into me since I first tried doing my own curries) The lower the better I'm beginning to see...no wonder you had such a loyal clientelle! Thank you VM...

Remember most vegetable only takes 15/20 minutes to cook low heat with the lid on! Keep watch and cooking my recipes, in now time you’re be a expert!!
@@ChefDin As they say, there's more than one way to crack an egg - which there is. But why complicate things when there's no need to? I live in a council house - not a restaurant - there's no need for speed (as in a take-away/restaurant enviroment) YOUR method of cooking a curry is right up MOST people's street. Love it, and thanks once again for showing us basically how you do YOUR own meals..... I'm still trying to get used to LOW temps and LONG times for cooking the veg's before putting in the spices, and then the chicken/meat to cook, but I/We love it....Cheers Din, top man👍

I also like to cook meat on the bone for the extra flavour it gives..
I can now get on the bone mutton locally so which cut would you recommend for this curry?

Mutton is my favourite meat I can’t get mutton here so I get goat which is similar!!
I like mutton chops , and mix rib with leg meat which I would cook with potato , eaten with boil rice!
@@ChefDin YES!! That sounds great, I often add potatoes to my curries as they soak up the flavour of the curry and help to thicken the gravy
Chef looks amazing. An authentic vindaloo does not use potato if i am correct in saying
You can add any vegetable to your curry , the name vindaloo comes from the Portuguese ! In the uk they added a piece of potato so the waiter could tell instantly that it’s a vindaloo, hope that answers your question!!
Definitely give this a go, how many does it serve
4/6 people depending on what you have with it on the side!! Plus how hungry you are!!

Saw a similar recipe but with cloves used but no brown cardamoms or peppercorns. What do you think?
You have to cook recipe to see the difference in flavour and taste!
