Simple Indian Chicken Vindaloo Recipe From Chef Ranveer Brar

  • The tour of the flavours of the world with Ranveer Brar is far from over but today we've come to a special country, none other than our very own, India. Among the numerous finger-licking delicious Indian dishes, super chef Ranveer Brar has chosen a very special dish to teach you, and it’s called Chicken Vindaloo. Let’s get cooking.
    Quick recap of the recipe:
    - Grind 1 cup red chillies in a mixer
    - Add ½ tablespoon black pepper to the chilli paste
    - Add ½ tablespoon coriander
    - Add ½ tablespoon cumin
    - Add ½ tablespoon ginger
    - Add 2-3 garlic
    - Grind them all to make paste
    - Add 1 tablespoon of vinegar
    - Grind again
    - Take 500-gram chicken in a bowl
    - Mix the paste with the chicken well
    - Chop 1 onion
    - Add 1 tablespoon oil in a pan
    - Add the onions to the pan
    - Add the chicken
    - Add water
    - Plate it
    - Garnish with coriander leaves
    - Add some yoghurt

    I made this last night for dinner Guests it was a super hit I finished it with an excellent red wine. Used vinegar in the masala while grinding
    I had marinated it over night Nothing was left the guests took everything away. Thank you Blessings and love

    Historically vindaloo is the most interesting dish, initially it was Portuguese way of cooking vinha de alho, it was brought to India, Goa, in the 16th century, then it developed it self and its brought back to Europe by the British empire.
    Today vindaloo is only famous in the UK, although everybody thinks is a Indian dish in fact is from Portuguese origin.

      correct , nobody even knows about this dish in North India , and the dish sold in Uk and Europe is vastly different to the original recipe

    We've always used fenugreek (very important for the Vindaloo flavour) and black mustard seeds.
    Pork vindaloo curry always had that lovely flavour and was dotted with those black mustard seeds.

    Of course, I added salt in the marinade process and to taste while cooking. I used cider vinegar and mustard oil for cooking! I e had the best results with this simple vindaloo recipe compared to others. I went a little big on the 🌶️! Fantastic!

    It's a Goan dish so you must give proper history and importantanc to Goa like how you give to other states of India.it is a Portuguese recipe brought to Goa.......

    Ranveer, aap ne bataya nahi ki laal mirch Ko Vinigar mein vigoke rakhna hai. Salt ka bhi pata nahi chala kis stage mein daalna hai, main toh marinade mein hi daalunga.

      You traditionally use goa vinegar or fruit vinegar (cider vinegar) in chicken vindaloo. However you can substitute it with red wine vinegar or malt vinegar.

    As much as I like vindaloo and other Indian curry dishes I’ve had it once and it’s way too spicy for me to the point where it upsets my stomach for a couple days. I guess the spice is something you have to acquire!

      It is. Vin in Vindaloo means wine. The original ingredient is goan palm toddy but you can add vinegar. Vinegar is a crucial ingredient. And its made with pork not chicken.

    Ranveer sir in Portuguese language vindaloo means (wine and garlic), so original name is vin-dhaloo.

    I tried your recipe, but think I may have messed up. I bought the dried kashmiri chilis & my sauce ended up too dry when I processed it. Ended up adding some water to it (it's marinating now, so we'll see). Can you please share with us what type of vinegar you use and what type of chilis? Was going to use white vinegar, but ended up going with rice vinegar. Will that change the dish drastically? Thank you for sharing your dish with us and looking forward to some clarification!

      As this channel is for a knife brand, I don't think he's involved with the comments or will answer. The chilis you bought are the correct kind. Next time soak the dry chilis in hot water for an hour and they will reconstitute. Palm vinegar is widely used in India and has a mild yeasty musty flavor. Rice vinegar in fine as it's also mild and white wine vinegar would work as another substitute.

      Yes, my grandmother and aunties always used to marinate first.
      In fact that is the true origin of vindaloo... meat was marinated (preserved) in wine and garlic and spices.

      Probably about 20min or til the chicken is cooked. What I'm sceptical about are the spice measurements. It says in the description a tablespoon of black pepper, coriander etc. No way is that a tablespoon the chef puts in?

      Will depend on the type of meat I think. Possibly add towards the end in case the salt toughens the meat while marinating. Or maybe it doesnt matter.

    #Victorinox your knives are good but you need to work on appearances of your knives as they are not attractive........for eg. look at dalstrong knives, they have very good looks along with edge and strength

    Dear Ranveer- Vindaloo is made in my community since 100s of years. In weddings our mothers and grandmothers we make it in huge quantities for the guests. A wedding in my town Vasai is incomplete without Vindaloo and we call it Indyal. Unfortunately none of the recipes on UA-cam have got it right. Water, onion and potatoes are never added to the real traditional vindaloo. Vindaloo is supposed to be a preservative dish and adding water, onion or potato will spoil it in a day. Sorry Ranveer but no marks for this recipe, it isn’t authentic.

    Actually ... your recipe isn't for Vindaloo. Vindaloo must have fenugreek and black mustard seeds. I think cardamom pods are used too.
    Also no yoghurt or coriander leaves.
    Plus with true vindaloo you just marinate the meat in the spices first

      yes, very important to use the right type of vinegar and don't use too much.
      You will have to try various vinegars until you find one that works well.
      I've tried brown vinegar, white vinegar, rice wine vinegar and apple cider vinegar. The taste can vary according to brand too.
      I think I prefer the Pearl River brand of rice vinegar. Experiment until you find one that works for you.
      The vinegar should caramelise, for want of a better word, but its all about the sugars in the vinegar converting correctly, and THEN the flavour magic happens. :)
      The vinegar and fenugreek are what gives vindaloo its special flavour. Black mustard seeds give it that true Goan flavour.
      Portugese/Indian cuisine is all about the spice magic. When you get the mix right you can truly create some magic. :)
