      That’s right that’s the simplicity of BIR curries the only difference between Dansak and pathia is you add lentils in Dana k! BIR curries were created to be cooked in minutes! In the 70s Indiana restaurants were lot more busier!!

      You can add all purpose flour but you need to add more baking flour, just google to see how much baking powder to add to a kg of flour to make into self rising!!

    I have tried many tikka recipes over the 30 plus years i've been working on my BIR skills, some of which have been very good indeed, but I have to say this is the best i've tasted. It produces perfect succulent restaurant flavoured chicken tikka I do have a question though concerning lamb tikka which can only be answered by a BIR chef. Whilst the marinade may be the same, how do you tenderise the meat so it has the same tenderness as chicken?. I have yet to achieve tender mouth watering lamb tikka in spite of long periods of marination and trying all different cuts of lamb and cooking times. It always eats "chewy". Is the la,mb precooked or something added to the marinade? I look forward to you answering my question chef 😀

      The best way to learn is to have a experience chef teach you the skills , this is what I’m trying to show in my videos , but if you could get lessons with a experienced chef , you could learn a lot and understand the techniques! But to answer your question You have to marinate for lamb for 2/3 days and the key is to cook it quick, the longer you cook the tougher it will get! Mastering the tandoor is a skill which takes years to learn ! Good luck

    Tx for your video.. as you flatten your naanbread, you dip your right hand in a fluid.. Is that oil? And if so, is the oil at the outside or at the wall of the oven? Tx. George

      You use oil so the naan doesn’t stick to your hand and sometimes you put a little water on the side of the naan that helps to stick to the oven , also you use water to wet your arm so it doesn’t burn the hairs !! Next summer I will do some more videos how to use the tandoor and how to make the different naans!!

      @ don’t be scared of the heat , you must have everything ready the oven must be the correct temperature, then you must be ready to go in and out quickly!! That’s the key but that takes a lot of mistakes before you will get good naans ! Good luck!!

    Hi again Chef, i wanted to ask, if you could once again share some of your wisdom: when making a big batch, approx 20kg onion, at the start is it required to add water? Since eventually the onions will release alot of water? And if we do add water at the start, whats the reason behind it ? Since adding water will make the onions boil indtead of “cooking” ?

      You can do it two ways adding just oil , bring to the boil , but it’s important to keep stirring!! Otherwise it will easy burn but it will cook quicker, then you add water! The other way is add water at the beginning like I do when I’m showing how to cook my base gravy!! Good luck

      In a bowel add 3 Tbsp of coconut powder 1 Tbsp of almond powder 1 Tbsp of sugar 1 tsp of sultan’s chopped Mix together with carnation milk in to a firm but soft paste and roll in to a ball! Filling made! No watch my Nan videos and see how I put the minced meat filling in to the keema Nan do exactly the same with the peshwari naan mix you have made and either cook under the grill or in the tandoor!! Maybe when I get time I will make a video showing different types of naan !! Good luck

    Don’t know if you’ve covered it in past episodes but the potatoes you put in looked like they were pre cooked in spices

      That’s right you precook them the same way as you precook vegetables, so leave out the veg and only use potatoes!

    Do you use methi leaves in the stock? It looks like it floating on the top and your other base uses methi?

      Yes you can if you have and fennel seed!

    This is my one pot chicken madras recipe created so you don’t need to make the base gravy! But if you already have base gravy then just cook the precooked chicken! And prepare the curry watching my tutorial!

      @@ChefDin morning i have lots o base gravy i made using your recipe, rather than do this: Place all ingredients below and blend to a smooth paste and put aside. 400g Onion 150g Tomatoes 30g Ginger 30g Garlic 25g fresh Coriander 50g Green pepper can i just use base gravy
